One Bowl Homemade Brownies

These brownies are as easy to make as the ones from a store bought mix, but a MILLION times better.  And all you need is one bowl (that’s right just ONE bowl!!), a few ingredients (that you probably already have in your pantry) and 20-25 minutes to bake them.This brownie recipe is my go-to recipe when I need a dessert fast.  I always have the ingredients on hand and I love that the ingredients don’t have to be at room temperature.  So basically, anytime I want to make homemade brownies, I can whip this recipe out.  And there really isn’t anything better than the smell of brownies baking in the oven.

Everyone needs that one recipe that they have in their back pocket when they need to make something fast for that impromptu get-together, or maybe when you have a hankering for something sweet, and this recipe is it.  These brownies are rich, decadent and have that nice crackle top.

One Bowl Homemade Brownies

Serves: 20 Cooking Time: 20-25 minutes

Ingredients

  • 10 tablespoons unsalted butter
  • 1-1/3 cups white granulated sugar
  • 3/4 cup + 2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs, cold
  • 1/2 cup all-purpose flour

Instructions

Preheat oven to 325-degrees. Line an 8x8-inch baking pan with parchment paper or foil and spray with baking spray. Set aside.

In a microwave safe bowl, add the butter, sugar, cocoa powder and salt. Microwave in 30-second intervals, stopping to stir the mixture every 30-seconds. Microwave the mixture until the mixture is fairly smooth and hot to the touch (approximately 1-1/2 to 2-1/2 minutes in the microwave).

Remove the bowl from the microwave and set the bowl aside for several minutes, to allow the mixture to cool so it is only warm to the touch. The mixture will look gritty. After mixture has cooled for several minutes, use a wooden spoon to stir in the vanilla extract. Add the eggs one at a time to the mixture, vigorously stirring each egg into the mixture. Stir the flour into the mixture until the flour is fully incorporated into the batter. Beat the batter vigorously for 40 strokes. Spread brownie batter into prepared pan.

Bake brownies on bottom rack in 325-degree oven for 20-25 minutes. Brownies are done when a toothpick inserted into the middle comes out without raw batter on it. My brownies took 23-minutes to bake.

Remove brownies from the oven and let set in the pan to cool completely before slicing into desired sized squares.

Notes

Store brownies at room temperature in an air tight container.

    I’m so impressed that you were able to keep buttercream on hand; usually if I have leftover frosting I eat it immediately sandwiched between some graham crackers :). These brownies look so yummy! Way better than a box–although box mix brownies do hold a special place in my heart! Have a great week Kelly!

      Hahaha OMG Kelsie! I actually used the remaining buttercream on graham crackers and made it into a blog post about using up leftover buttercream. My husband had never had frosted graham crackers with sprinkles before…I made them for him and he loved them! Post coming soon…so you can laugh about it when I post it 🙂 XOXOX And box mix brownies are amazing…but I am seriously loving these ones I just made!!

      I know right?!?! I would heat a huge brownie slice up in the microwave for a few seconds and then top with hot chocolate sauce hahaha. So goooooood!! You can never go wrong with brownies right! XOXO 🙂

    Book over movie EVERY SINGLE TIME!!! Though…I wish I had more time for reading in my life. That area is majorly lacking these days. I’m a sucker for Ghiradelli brownie mix in a pinch, but totally agree that from scratch is well worth the extra few minutes it takes 🙂 XO

      I know….I wish I had more time to read too! Sometimes I will bring my book to the gym and go walk on the treadmill and read. It’s the only time I can focus on just reading lol. Usually when I watch a movie, I am sitting here blogging with my laptop lol. Love Ghirardelli brownie mix for sure too!! XOXO 🙂

    um. that was me last night, and i ended up making brownies at 12am. oops. love that these are cocoa powder-based; brownies that use cocoa always taste so much more chocolate-y to me! also, have you tried the tj’s brownie mix? probably my favorite brownie mix ever (esp bc there’s chocolate chips mixed in!).

    I kinda love the idea of asking for anonymous comments about your brownies! So awesome. yeah I grew up making box mix too and using margarine for cookies (gag!) I love making everything from scratch.
