Chocolate Peanut Butter Blondies

Chocolate flavored peanut butter is the key to these blondies!  Blondies are the best….the brown sugar we use in them, is what makes them so rich and soft.  Swoon.  So why not add chocolate flavored peanut butter to my blondie recipe and some patriotic M&M’s?  Ummm.  Yeah!  A super easy recipe, that is fool proof for those of you out there that may doubt your baking skills, or anyone needing a quick and easy dessert recipe.

Blondies….These Chocolate Peanut Butter Blondies would be the perfect dessert dish to bring to a cookout or backyard BBQ party, because they are so easy to make, they feed a crowd and they are YUMMY!

Any chocolate peanut butter spread will work, but I used this one from Peanut Butter & Co:

The taste of the chocolate peanut butter is still very peanut butter forward, with just the perfect hint of chocolate.

Chocolate Peanut Butter Blondies

Print Recipe
Serves: 20-30 Cooking Time: 30-minutes

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups light brown sugar, packed
  • 2 eggs, room temperature
  • 1 cup chocolate peanut butter (I used Peanut Butter & Co Dark Chocolate Dreams)
  • 2 teaspoons vanilla extract (I used Ballard Extracts Chocolate Extract)
  • pinch of salt
  • 2 cups all-purpose flour
  • 1 cup M&M's (I used plain variety)

Instructions

Preheat oven to 350-degrees. Line a 9x13-inch baking dish with parchment paper and spray the bottom and sides with baking spray. Set aside.

In the bowl of a stand mixer (or using a hand mixer), affixed with the paddle attachment, add the butter and brown sugar. Mix on medium-high speed until well incorporated. Add the eggs one at a time to the mixer, mixing the first egg in fully before adding the second egg. Add the chocolate peanut butter, salt and vanilla extract to the mixer and mix until combined with the butter and sugar.

Change the mixer to low speed and slowly add the flour to the wet ingredients, mixing only until barely incorporated. Remove the bowl from the mixer and use a rubber scraper to ensure all the ingredients are fully incorporated. Fold the M&M's into the dough.

Pour dough out into prepared baking pan, ensuring the dough is evenly dispersed in the pan.

Bake the blondies in 350-degree oven for 30-minutes. The blondies may not look done, but they are. They will continue to bake and set after you remove them from the oven. Do not over bake.

Option to immediately add additional M&M's on top of the blondies once you remove them from the oven. Gently push the M&M's into the blondies.

Let the blondies set in the pan until semi-cool, and then transfer the blondies onto a wire rack to finish cooling. Once completely cooled and set, cut into desired size squares.

Notes

Store blondies in an air tight container at room temperature. Blondies will stay fresh for several days.

These blondies look like a light version of a brownie…

Perfectly patriotic!  Great for any 4th of July picnic or celebration or any day…because #merica is always worth celebrating!  Or just use regular M&M’s 😉

    Oh these look so divine and easy to make, The chocolate peanut butter must give off an incredibly delicious taste.
    You say to store them in an airtight container to stay fresh for several days…. these will never get to see the inside of an airtight container and let alone lasting several days…. If you know my boys…..it will last just SEVERAL MINUTES!!!!! 😁

    ahhh i love blondies!!! also this is super true: “the blondies may not look done, but they are.” can’t tell you how many times i’ve overbaked blondies, and then proceeded to pass them off as cake lol.

    These chocolate peanut butter blondies look perfect for the 4th of July. I think that blondies are a great dish to take to a get together and since we love peanut butter anything I think that I am going to take these to a get together that we are having this week. Thank you for sharing.
