Chocolate Pudding M&M Cookies

Chocolate cookies, with the addition of chocolate pudding to the batter, and M&M’s makes for the perfect chocolate cookie if you ask me!  I love oatmeal cookies and chocolate chip cookies…but chocolate chocolate cookies are another one of my favorite cookies.  Pudding in cookies?  Yes…trust me.  It is amazing.  The pudding helps to keep the cookies stay soft for days, which makes this a great recipe for cookie exchanges or for those holiday parties when you want to make something ahead of time.  And these ship well too, in case you are looking for something sweet to send to someone 🙂  I love getting mail–but cookies in the mail?!  That makes for a happy mail day!

I have made pudding cookies several times before, but never chocolate chocolate pudding cookies!  These are rich little bites of amazing-ness and the holiday M&M’s make them perfect for the holidays!  The pudding you use in the cookies is the instant type. See picture for a visual…I am such a visual person so I like pictures!

Hershey’s of course…but you can use whatever chocolate pudding brand you want.

Chocolate Chocolate Pudding M&M Cookies

Serves: 38 Cooking Time: 8-minutes

Ingredients

  • 3/4 cup butter, room temperature
  • 3/4 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3.4-ounce or 3.56-ounce (Hershey's brand weighs more than the other brands- but both work) instant chocolate pudding
  • 2 teaspoons vanilla extract
  • 2 eggs, room temperature
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup M&M's

Instructions

Preheat oven to 350-degrees. Line three baking sheets with parchment paper and set aside.

Add butter to the bowl of your stand mixer and beat the butter using the paddle attachment for 1-2 minutes until butter is pale in color and smooth. Scrape the sides of the bowl down and add both sugars to the butter. Beat on medium-high until sugar mixture is light and fluffy (2-3 minutes). Add nutmeg, cinnamon and entire package of instant pudding mix to the sugar mixture. Mix on low until all ingredients are incorporated. Add the eggs, one at a time, to the mixer. Beat egg into mixture completely before adding second egg. Add vanilla to the mixture and mix on medium-high until all ingredients are incorporated (scrape down sides of bowl as needed).

With the mixer on low, slowly add the flour, cocoa powder and baking soda to the sugar mixture. Mix until barely combined. Add semi-sweet chocolate chips and M&M's to the mixture and mix on the lowest setting for 10-seconds. Remove bowl from mixture and use a spoon or rubber scraper to completely combine all ingredients in the dough without overworking it.

Use a small cookie scoop to scoop cookie dough balls onto parchment lined baking sheets. Bake one cookie sheet at a time for 6-8 minutes depending on your desired doneness. I baked mine for 8-minutes and they were perfect. If I was making them for myself, I would have baked them a minute or so less because I like gooey, underdone cookies.

Notes

Store at room temperature in an airtight container. These cookies will stay fresh for several days.

Here is a tried and true way to ship cookies: after your cookies have cooled, take two cookies and place them bottom to bottom (back to back), and wrap the cookies tightly in saran wrap.  Place wrapped cookies in a ziplock bag and then into a sturdy shipping container.

Anyone planning on having any cookie exchange parties this year?  My mom, sister and I do an annual holiday baking day filled with all our homemade fudges, almond roca, peanut brittle, candies and cookies!  That will be such a fun post…coming in December!!

      Hi Tina! You could use any chocolate pudding, but I love Hershey’s so I went with that! They were soooo soft and yummy! Definitely a good cookie to make for a cookie exchange 😉 XOXO
