These Cinnamon Sugar Blondie Bars are soft bars of cinnamon-sugar goodness!! It’s no lie when I say everyone who has tried these blondies, loves them. This has been one of my go-to recipes for years and I have found it perfect for any occasion, or no occasion at all. Because Cinnamon Sugar Blondie Bars don’t need an occasion. They just need to be eaten! This is definitely a recipe you will want to pin and save for later!
I have been hitting the bars HARD lately. Sorry… I just get in one of my kicks and I just can’t stop. Or maybe it’s because I am back at work and my free time is limited?? Bars are just my go-to. Oh wait…did you think I meant I was hitting the actual bars to go drink??? Hahahaha. Nooooo. Silly. I meant cookie bars 😉 I probably have at least three other cookie bar recipes in draft form waiting to be published on the blog.
But if I am busy, then I know you must be busy too, so it’s a win-win for us both! Bar cookies are super easy, and take way less time to make! Just mix up your dough, spread it in your pan, top it off with a cinnamon-sugar mixture and then BAKE!!! Here are my blondies ready to be baked!
These blondies will feed a crowd, which is why I have made them for baby showers, birthday parties, work meetings, etc. And like I said before….everyone loves them. Make these. Share them. And be prepared to hear people sing praises over these blondies!
Cinnamon Sugar Blondie BarsPrint Recipe
- 1 cup unsalted butter, room temperature
- 2 cups light brown sugar, packed
- 2 eggs, room temperature
- 1 tablespoon Vain Mexican Vanilla extracted in Cane Rum
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2-2/3 cups all-purpose flour
- 2 teaspoons baking powder
- CINNAMON-SUGAR TOPPING:
- 2 tablespoons white granulated sugar
- 2 teaspoons ground cinnamon
Preheat oven to 350-degrees. Line a 9x13-inch baking pan with parchment paper and spray with baking spray. Set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until light and creamy. Add the brown sugar to the butter and beat until light and fluffy. Scrape down the sides of the bowl as needed. Add the eggs to the mixture one at a time, beating the first egg in completely before adding the second egg. Add the vanilla extract, cinnamon and nutmeg to the mixture and mix on medium-high speed until fully incorporated. Change the mixer speed to low and add the flour and baking powder to the mixture. Mix until barely incorporated. Remove the bowl from the mixer and use a rubber scraper to ensure all ingredients are incorporated. The batter will be thick. Pour Batter into prepared pan and spread evenly into the pan. Put a little water on your fingers to help evenly spread the batter into the pan. Set aside.
PREPARE CINNAMON-SUGAR MIXTURE: In a small bowl, combine the sugar and cinnamon and stir until combined.
Pour cinnamon-sugar mixture evenly onto the top of you blondie batter. Bake blondies in 350-degree oven for 30-minutes. Remove the blondies from the oven and let set and cool completely before slicing into desired sized squares.
Store blondies in an airtight container at room temperature. Blondies will stay soft and fresh for several days.
These blondies will make your house smell AMAZING while they are baking……
Once your blondies have cooled and set, you can go ahead and slice them up into squares!
Thick, soft and chewy….and no shortage of cinnamon or sugar!!
These blondies are perfect for any time of day…and with coffee or tea too!
So when you were a kid, did your mom ever make you cinnamon-sugar toast?? You know….good ol’ sliced white bread, toasted, covered in butter, and then topped with cinnamon sugar? My mom used to make that for me and my sister ALL the time when we were growing up, and these blondies totally remind me of that!!
