Cinnamon Sugar Blondie Bars

These Cinnamon Sugar Blondie Bars are soft bars of cinnamon-sugar goodness!!  It’s no lie when I say everyone who has tried these blondies, loves them.  This has been one of my go-to recipes for years and I have found it perfect for any occasion.

Besides being delicious, these bars are SO EASY to make and this is the recipe I go to when I need to whip up a dessert and have little time.

Cinnamon Sugar Blondie Bars

Serves: 36 Cooking Time: 30-minutes

Ingredients

  • 1 cup unsalted butter, room temperature
  • 2 cups light brown sugar, packed
  • 2 eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2-2/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • CINNAMON-SUGAR TOPPING:
  • 2 tablespoons white granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

Preheat oven to 350-degrees. Line a 9x13-inch baking pan with parchment paper and spray with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until light and creamy. Add the brown sugar to the butter and beat until light and fluffy. Scrape down the sides of the bowl as needed. Add the eggs to the mixture one at a time, beating the first egg in completely before adding the second egg. Add the vanilla extract, cinnamon and nutmeg to the mixture and mix on medium-high speed until fully incorporated. Change the mixer speed to low and add the flour and baking powder to the mixture. Mix until barely incorporated. Remove the bowl from the mixer and use a rubber scraper to ensure all ingredients are incorporated. The batter will be thick. Pour Batter into prepared pan and spread evenly into the pan. Put a little water on your fingers to help evenly spread the batter into the pan. Set aside.

PREPARE CINNAMON-SUGAR MIXTURE: In a small bowl, combine the sugar and cinnamon and stir until combined.

Pour cinnamon-sugar mixture evenly onto the top of you blondie batter. Bake blondies in 350-degree oven for 28-minutes. Remove the blondies from the oven and let set and cool completely before slicing into desired sized squares.

Notes

Store blondies in an airtight container at room temperature. Blondies will stay soft and fresh for several days.

Thick, soft and chewy….and no shortage of cinnamon or sugar!!

    I love baking bar cookies! Trust me, you’ll never share too many :). I love how quickly they come together–perfect for when you just don’t have time to bake anything else. These look delicious! Cinnamon is one of my favorite things.

    One of my 13 year old daughters made these for me for my half birthday today. (I was dying for an excuse to try these!) Oh my word!!! Soooooooo good!!

      Hahahahah I totally laughed when I read this Christy, because me husband says the same thing to me!!!!
