Cocoa Krispies Treats

Ooey, gooey Cocoa Krispies Treats.  Full of melty marshmallows and chocolate chips and topped with holiday M&M’s– because why not?!

I am back with another dessert recipe using cereal as an ingredient.  Yes.  I am obsessed with cereal.  Point proven.  End of case.  But really…who doesn’t love a good ol’ Rice Krispies treat???  So easy to make!  So step away from the pre-made Rice Krispies bricks treats and make your own!  I changed my go-to Rice Krispie treat recipe (I will share the classic recipe soon) to incorporate chocolate in every way possible.

If we are going to make Cocoa Krispies treats, then we need to use Cocoa Krispies!!  Snap, crackle, pop yo.

And then we are adding M&M’s to the top of the Cocoa Krispies treats because we need more chocolate!  And these M&M’s are full of Christmas cheer 🙂

Cocoa Rice Krispies Treats

Print Recipe
Serves: 20 Cooking Time: 5-minutes

Ingredients

  • 5 tablespoons unsalted butter
  • 8 cups mini marshmallows
  • 6 cups Cocoa Krispies cereal
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1-1/2 cups semi-sweet chocolate chips
  • 1/2 cup M&M's (for topping)

Instructions

1

Line a 9x13-inch baking pan with foil and spray with cooking spray. Set aside.

2

In a large pot on the stovetop, add butter and melt over medium-high heat, stirring occasionally. Once the butter is melted add the marshmallows to the pot. Stir butter and marshmallows constantly until all the marshmallows have melted. Remove pot from stove and add a pinch of salt and vanilla extract to the marshmallow mixture. Stir until combined.

3

Gently fold in the Cocoa Krispies into the marshmallow mixture and add the chocolate chips. Stir until the chocolate chips and Cocoa Krispies are thoroughly incorporated in the marshmallow mixture. The chocolate chips will start to melt and get ooey, gooey. Pour mixture out into prepared pan and gently press mixture into pan. Top with the M&M's, pressing the M&M's gently onto the tops of the treats.

4

Let the treats cool in the pan and set before slicing into desired sized squares.

5

Store at room temperature in an airtight container.

Mmmmm hmmmm….
