Bars, Blondies & Brownies

Fudge-y Toffee Brownies

Chocolatey, fudge-y brownies with chunks of B. toffee studded throughout the brownies.  How can you make brownies better?  You add toffee.  B. toffee to be exact!  You guys….these brownies are sooooooooo good!!  This is my FAVORITE from scratch brownie recipe.  The recipe that people always ask for, so of course I am sharing it with you.  You will never believe how easy it is to make these!

I was going through my recipe binder, which has a collection of family recipes, some of my recipes and print-outs of recipes I have found over the years.  As I was looking through my recipe binder, I came across my typed recipe for “Kelly’s Yummy From Scratch Brownies.”  I typed that recipe a few years back, so I could give it to people when they wanted the recipe, because people were always asking for it after trying these brownies.  So now it’s here on the blog!

When Betsy from B. toffee sent me some more of her yummy toffee, I knew adding her toffee to my brownies would be a chocolate marriage made in chocolate heaven.  And from that marriage these Fudge-y Toffee Brownies were born.  Mmmmm hmmmm!!

I interrupt this brownie blog post to bring you some fun, cute animal baby pictures!!  My sister lives on 10-acres, so they have alpacas, goats, chickens, dogs and cats (because having a 4-year old and a 2-year old, and a full time job, isn’t enough work for my sister hahaha).  And Wendy just sent me a picture of the newest addition to the farm:

Meet baby Justice!  After 11-1/2 long months of being pregnant (yes….almost a year long pregnancy), Freedom gave birth to healthy boy.  Fun facts: a baby alpaca is called a “cria” and a male alpaca is called a “macho” and a female is called a “hembra.”  And yes….alpacas spit (but generally at each other and not at humans).

And ready for even more cuteness??  I bred my Yorkie (Jack) with my friends’ Yorkie/Maltese mix….and after the first try, we ended up with five puppies!!

I get one puppy to keep or sell, so I chose the blonde female because she was different from the rest of the litter.  I am hoping I find someone who wants to add her to their family, because I know I really shouldn’t keep her.  But how can you resist that face?!?!

Ok, ok….back to brownies.  I made these brownies, and baked them, all while it was 110-degrees outside.  Hey, when you want brownies, you want brownies!  Plus I was going to my sisters house the next day to watch my nieces for a few hours, so I always like to bring the girls some treats 🙂

These brownies are like a cross between a brownie and fudge.  To me that means it is the perfect brownie!  And this is a one bowl recipe.  No mixer required!

Fudge-y Toffee Brownies

Print Recipe
Serves: 30 Cooking Time: 30-35 minutes

Ingredients

  • 10-tablespoons unsalted butter, cut into several chunks
  • 1 (4-ounce) package unsweetened Bakers chocolate
  • 3 eggs, room temperature
  • 2 cups white granulated sugar
  • 2 teaspoons vanilla extract (I used Vain Ugandan Vanilla Extracted in Premium Vodka)
  • 1 cup all-purpose flour
  • 1 (8-ounce) package B. toffee dark chocolate toffee, cut into chunks (1-1/2 cups of toffee chunks)
  • 1/2 cup B. toffee milk chocolate toffee, cut into chunks (optional- to press into the top of the brownies)

Instructions

1

Preheat oven to 350-degrees and line a 9x13-inch baking dish with foil and spray the bottom and sides of the dish with baking spray. Set aside.

2

In a large microwave safe bowl, add the butter and entire package of Bakers chocolate. Microwave the butter and chocolate in 15-second intervals, stopping every 15-seconds to stir the mixture. Microwave only until the chocolate and butter is melted, approximately 90-120 seconds.

3

Remove the melted chocolate mixture from the microwave, and let the mixture sit for several minutes to cool slightly. After mixture has cooled, add one egg into the mixture and stir egg in completely before adding the second and third eggs. Stir in the sugar and vanilla extract into the mixture. Stir until all ingredients are incorporated. Stir in the flour. Fold in the toffee chunks.

4

Pour batter into prepared pan and press an additional 1/2 cup of toffee into the top of the brownies before baking (optional). Bake brownies in 350-degree oven for 30-35 minutes. I baked mine for 30-minutes and they were fudge-y and a little under done (they way I like my brownies). Bake until a toothpick inserted into the middle comes out without raw batter on it.

5

Let brownies sit and cool in the pan. Once brownies have cooled, cut into desired sized squares.

Notes

Store at room temperature in an airtight container.

That’s a chunk of toffee there in the middle of that brownie!

You can add toffee baking bits, or your favorite kind of toffee to these brownies.  I just love B. toffee and Betsy does such a great job with packaging her toffee so it is the perfect gift.  If you are looking for wedding favors or party gifts for your guests, you need to check out B. toffee!

What’s your favorite addition to brownies??  You can make this recipe and leave out the toffee.  Plain brownies are darn good too….especially when added on top of a bowl of ice cream.  With chocolate sundae sauce, of course!

XOXO,

Kelly

I love toffee and what could be better than adding toffee to a delicious brownie. It sounds like you had a fun little animal adventure. I grew up on a farm and have since decided to leave the farming to someone else – lol! Thanks for sharing your recipe and have a great day.
