Lofthouse Sugar Cookies (Copycat Recipe)

These cookies…oh my.  You have had a Lofthouse sugar cookie from the grocery store before right?  I looooooove those super soft, cake-like sugar cookies with the sweet frosting and sprinkles of course!  It is probably the only cookie I would eat that I didn’t make myself.  This Lofthouse Copycat Cookie recipe is easy and doesn’t require six cups of flour like some other Lofthouse Copycat recipes call for!

I first saw Lofthouse cookies when I was in high school, working my after school job at Ralph’s Grocery store.  That was such a fun job!  I started off as courtesy clerk (aka: bagger) and then moved to work in the video rental department (back when there was such a thing) and then to the customer service desk where I was in charge of counting money for the tills, cashing payroll checks for customers, money orders, lotto tickets etc.  But what made it fun was all the people I worked with!  I have such fond memories of the people I worked with there.  So working in a grocery store can be kind of a caveat because it’s just too easy to pick up some treats after my shift was over.  And a package of Lofthouse cookies and a rented DVD pretty much sums up more than a few of my Friday nights as a teenager #introvertsunite!

Ok….lets get back to these cookies!  The dough was very sticky and I refrigerated the dough overnight to make it more manageable when rolling the dough into balls.  Even after refrigerating the dough, it was still a little sticky.  Just FYI in case you make these and think something is wrong with your dough….nope….just sticky as hell cookie dough!

I had just pulled the first batch of cookies from the oven when I got a text message from my husband at work, “Guys at work are asking about treats.”  My best taste testers!  It’s a rarity that James is at work and I either don’t send him in to work with goodies or come down to the station to deliver whatever I am baking to them.  So the guys were in luck because these cookies were heading straight for MFD Station One!

Make your frosting whatever color you want!  I would have done pink, but I was using my leftover lemon frosting that was already yellow.

Lofthouse Sugar Cookies (Copycat Recipe)

Serves: 22 Cooking Time: 14-minutes

Ingredients

  • 1 cup white granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 eggs, room temperature
  • 1/2 cup sour cream
  • 2 teaspoons clear imitation vanilla extract
  • 1 teaspoon butter emulsion
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

In the bowl of your stand mixer, cream your butter until pale in color. Scrape the sides of the bowl and add the granulated sugar to the butter. Mix on medium-high until light and fluffy. Add eggs, one at a time, mixing throughly before adding the second egg. Add sour cream to sugar mixture and mix until thoroughly incorporated. Add both extracts.

Scrape down the sides of the bowl and add one cup of flour to the wet ingredients, mixing slowly until just combined. Add the baking powder and second cup of flour. Mix until just combined. Add baking soda, nutmeg and last cup of flour to the mixture, mixing on low until just incorporated.

Remove bowl from the mixer and stir by hand, to make sure dough is fully incorporated. Place dough in an airtight container and refrigerate overnight.

Preheat oven to 350-degrees. Line two baking sheets with parchment paper. Using a medium cookie scoop, scoop cookie dough onto the cookie sheets. Roll the dough balls by hand to make sure they are completely round. Bake cookies for 14-minutes. Do not over bake. Cookies may appear slightly underdone, but these cookies are soft and do not have crispy edges.

Let cookies cool for 10-minutes on the cookie sheet before transferring to a wire rack to completely cool.

Wait until cookies are completely cooled before frosting. I used leftover buttercream from my Lemon Cupcakes to frost these cookies. The frosting I used can be found if you click on the above link for my Lemon Cupcakes. Just half the frosting recipe. Decorate freshly frosted cookies with sprinkles!!

Store at room temperature in an air tight container.

So I had just enough time to snap a few pictures of the finished cookies when the fire truck pulled up out front of my house…they just happened to be by my house after finishing up some training.  I sent two plates of these cookies back to the station with them, and boy were the guys pumped to get these cookies!!  I just wish I had a picture of all the burly fireman eating these cute sprinkle cookies.  About 3 minutes after the guys left my house after picking up the cookies, I got a text and picture from my husband:

James: “One plate of cookies already gone within a minute of us getting back on the truck!”  James said these definitely tasted like the Lofthouse cookies and it got the Firefighter Seal of Approval.

And all that was left a few hours later!!  These cookies were so yummy, I had to make a second batch and share them with my mom!  Made with pink buttercream frosting this time of course!

    Really cute post Kelly, and how come I’ve never heard of Lofthouse cookies? Do I have to be a firefighter to get some? (lol)

      Probably because dad does all the grocery shopping! Hahahahahaha!!! Wendy just asked about these and I need to make another batch, so maybe us girls need to get together this weekend, I’ll bake these and then we can eat some Lofthouse cookies!

    These are soooooooooooooooooo good!! We usually just make cutout sugar cookies to recreate those cookies but I was so excited to try your recipe. My daughter made them today for St. Patrick’s Day. It was a different tasting dough but they truly had the lofthouse flavor all baked up! Thank you so much!! We each had 3 tonight. 🙂
