Peanut Butter and Jam Blondie Bars

Peanut Butter and Jam Blondie Bars are like the adult version of a peanut butter and jelly sandwich.  And who doesn’t love a peanut butter and jelly sandwich?!  Obviously these blondie bars are way more sweet than a PB&J sandwich, so these blondies are the dessert you eat after your sandwich.  Or eat them for a really awesome breakfast.  It has jam okay?  Totally appropriate for breakfast.

Let’s get our jam on!  I was so excited to come home from work the other day to find a box of Jamnation Jams on my porch, sent to me by Foodlyn.  These are some serious jams y’all.  Which makes sense that Foodlyn sells them, because they are probably the most unique jams I have ever seen or tasted.  Midnight in Pearis (bosc pear butter with vanilla and nutmeg), Apricot Up In The Moment (apricot jam with almond essence) and Razzle Bazzle (raspberry jam with basil essence).  Ummm….how do you not love those names?!

So getting the box of Jamnation Jams that Foodlyn sent me, I was immediately inspired to make a grown-up version of peanut butter and jelly.  And y’all know my love for blondies….so that’s what I came up with!

Peanut Butter and Jam Blondie Bars

Serves: 20 Cooking Time: 35-40 minutes

Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup creamy peanut butter
  • 1 cup light brown sugar, packed
  • 1/2 cup dark brown sugar, packed (option to use all light brown sugar)
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla extract (I used Ballard Extracts Vanilla Extract)
  • 1/4 teaspoon ground nutmeg
  • 1-1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 3 tablespoons Jamnation Midnight in Pearis Jam (or your jam of choice)
  • 1 tablespoon honey roasted peanuts, chopped

Instructions

Preheat oven to 350-degrees. Line an 8-inch baking pan with parchment paper and spray with baking spray. Set aside.

In the bowl of your stand mixer, affixed with the paddle attachment, add the melted butter, peanut butter, light and dark brown sugars. Mix on medium-high speed until light and fluffy. Scrape down the sides of the bowl as needed. Add the eggs to the mixture, one at a time, mixing the first egg in completely before adding the second egg. Add the vanilla extract and nutmeg to the batter. Mix until incorporated.

Change the mixer speed to low and slowly add the flour, baking powder and salt. Mix until barely combined. Remove the mixing bowl from the mixer and use a rubber scraper to ensure all ingredients are well incorporated.

Pour mixture into prepared baking pan. Dollop the jam onto the top of the peanut butter mixture. Sprinkle the chopped peanuts on top, evenly.

Bake in 350-degree oven for 35-40 minutes, or until a toothpick inserted in the middle comes out without raw batter on it. The blondies may not seem done, but they will set once they have fully rested. Do not over bake. Remove blondies from the oven and let set on the counter.

Cut blondies into desired sized squares once blondies have completely cooled and set.

Notes

Store blondies in an airtight container at room temperature. Blondies will stay soft and fresh for several days.

For being Peanut Butter and Jam Bars, these are pretty darn sophisticated.  That jam!!

The peanuts add the perfect contrast in texture for these blondies…but only add what is listed in the recipe, or the peanuts will over take all the other flavors.  I added extra peanuts for photo purposes, so that’s why mine look like they have a ton of peanuts on top.

    That pear jam sounds incredible and putting it with peanut butter and then putting all that into a blondie is just fab! I couldn’t have these in my house they wouldn’t survive 5 minutes!
