S’mores Bars

A yummy, ooooooey, gooooooey S’mores Bar.  I know it’s February and maybe not technically “S’mores Season” but to me, a S’more is always a good idea.  Today I bring you a S’mores Bar that is a cookie base, with added marshmallows and chocolate, and then topped with a crushed graham cracker topping, more marshmallows and more chocolate chips!  Are ya in?!

I love getting involved in the #FoodBloggerLove assignments (remember the FBL Cookie Exchange I did this past December?), because it is great to get to know other bloggers and to love and support each other!  So instead of a cookie exchange for this current assignment, each blogger was randomly paired with another blogger, had to write a blog post featuring a recipe from their assigned bloggers blog and then make their blog post all about that blogger!  So fun!  Make sure you go all the way to the bottom of this post to check out the #FoodBloggerLove linkup, with all the recipes from everyone who participated!

I was excited to get matched up with Teri from The Freshman Cook blog.  Teri has been a professional chef and restaurant owner for 20-years, and created her blog for the freshman cook.  Teri is not a freshman cook (ummm did you see the part about her being a professional chef?!  So cool!), but wanted a blog where she could teach others to cook and bake, with recipes even the most “freshman” of cooks can make!  And boy does Teri have a ton of yummy recipes on her blog!    I had such a hard time deciding between her Butterscotch Bars, Dad’s Cookies (I may have to make these for Father’s Day!), Luv U! Marshmallows (perfect for V-Day!), Chicken Stir Fry, Country Skillet Breakfast and soooooo many more recipes.  In the end S’Mores Bars won 🙂  I made a couple ingredient swaps from Teri’s original recipe, just to accommodate what I already had in my pantry, so make sure you click on the link above to check out Teri’s original recipe!

I didn’t have mini marshmallows, which the original recipe used, so I used these Mallow Bits in their place.  I would recommend sticking to mini marshmallows for ultimate gooeyness though!

S'mores Bars

Print Recipe
Serves: 24 Cooking Time: 40-50-minutes

Ingredients

  • 1 cup unsalted butter, room temperature
  • 3/4 cup white granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 cup mallow bits (or mini marshmallows)
  • 1-1/2 cups semi-sweet chocolate chips
  • TOPPING:
  • 6 whole graham crackers, coarsely crumbled (a little over a 1 cup)
  • 4 tablespoons butter, melted
  • 1/2 cup mallow bits
  • 1/2 cup milk chocolate chips

Instructions

Preheat oven to 350-degrees. Line a 9x13-inch baking pan with parchment paper and spray with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, cream the butter on medium-high speed until smooth and creamy. Add both sugars to the butter and mix until light and fluffy. Add eggs one at a time to the mixture and beat until fully integrated. Mix in vanilla extract. Change the mixer speed to low and slowly add the flour, baking soda and salt. Mix only until barely combined, then add the mallow bits and chocolate chips. Mix until combined. Pour dough out into prepared pan and press evenly into the pan. Set aside and prepare topping.

Put the graham crackers in a ziplock bag and use a hard object to smash the graham crackers until they become coarse crumbs. Melt the butter in a microwave safe bowl and add the graham crackers to the melted butter, mixing with a fork until it resembles coarse sand. Sprinkle the graham cracker mixture over the top of the cookie dough. Sprinkle 1/2 cup mallow bits and 1/2 cup milk chocolate chips over the graham cracker mixture. Gently press down into the dough.

Bake in 350-degree oven for 40-50 minutes, or until a toothpick inserted in the middle comes out without raw batter on it. Don't over bake though. Bars will continue to cook as they set. Let bars cool completely before cutting into desired sized bars.

Notes

Store at room temperature in an airtight container.

My sister bought me those cute little S’Mores couple 🙂 Wendy said the burnt marshmallow was me and she was the other one….I think because I always burned my marshmallows when making S’Mores hehehe.

I didn’t burn these though! Ha!!  James loved them!

    Oh my goodness. I just happen to have some of those mini marshmallows and I can’t remember why I bought them! Now I know! These look yummy!

      Hi Karen! The Mallow Bits are great because they don’t really melt in cookies like the regular mini marshmallows do! But nothing wrong with using mini marshmallows and getting that super ooey-gooey! Thanks for checking out the blog! XOXO 🙂
