Sugar Cookie Butter No-Bake Cookies

I love no-bake cookies!  They are my go-to cookie when I need to make a cookie fast because: 1. you don’t have to bake them (duh) and 2. they take a short amount of time before they are cool enough to be sent on their merry way to someones tummy.  While the chocolate peanut butter no-bake cookies are classic, I am always trying to come up with some crazy variation.  And I found it.

I saw this Sugar Cookie Peanut Butter one day at Sprouts and knew it was just meant to be made into a no-bake cookie.

This cookie butter tastes like a combination of peanut butter and cinnamon sugar. Um yum?!?!  If you don’t have a Sprouts store near you, you could use any kind of cookie butter (but depending on what cookie butter you use, you might want to use all vanilla extract rather than maple and vanilla extract).  Trader Joes always has some cool seasonal cookie butters!

Sugar Cookie Peanut Butter No-Bake Cookies

Serves: 12 Cooking Time: 1-minute

Ingredients

  • 4 tablespoons butter
  • 1/2 cup milk (I used unsweetened vanilla almond milk)
  • 2 cups white granulated sugar
  • 1 cup Sugar Cookie Peanut Butter Cookie Butter
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple extract
  • 3 cups quick cooking oats

Instructions

Place a Silpat or large piece of foil on the counter to drop your cookies on when they are done cooking. Measure out three cups of quick oats and place aside in a bowl. Measure out your cookie butter and get your other ingredients out and ready to go.

In a medium sized pot, add the butter, milk and sugar. Heat on medium-high heat on the stovetop, stirring regularly. Once mixture starts to boil (bubble), set timer for 1-minute. Boil mixture for ONLY 1-minute while stirring constantly. Immediately remove from the stovetop and add the pinch of salt and both extracts to the pot. Stir. Add cookie butter and stir for a minute or two until mostly incorporated into the butter-sugar mixture. Add quick oats and stir until everything is well combined.

Immediately drop spoonfuls of cookie mixture on Silpat or foil, in whatever size you desire. While the cookies are still warm you can gently shape them with your fingers if you want them to look more uniform.

Store in an air tight container at room temperature.

I gave my sister some of these cookies when she dropped off my nieces for me to watch for a few hours.  My sister quickly declared these to be her new favorite cookies!!

It was early when Wendy dropped Miss G and Miss A off for me to watch, so I figured we could stay in our jammies and cuddle on the couch!  I took advantage of the periods of calmness to blog.  I have been so busy lately, I gotta take advantage of every spare minute I can!

Ok so you definitely need to make these no-bake cookies!! I will be back with several more variations of the no-bake cookie, because they are the BEST!!!!
