The BEST Rice Krispies Marshmallow Treats

What’s so special about a no-bake dessert made using marshmallows, butter and Rice Krispies cereal??  Well…I have a secret ingredient I use to make my marshmallow treats that will have people oohing and ahhing over a treat that is really quite simple.  I know there are like million, bajillion Rice Krispies Treats recipes out there, but if you are reading this, then you have found the only marshmallow treat recipe you will ever want to make again!

I know Rice Krispies Treats seem like such a simple dessert to make, but like all things baking, or no-baking, dessert recipes are a science.  If there’s too much butter or marshmallows in your treats, you end up with sad, goopy and soggy treats (my advice if this happens, is to grab a spoon and just eat directly out of the pan).  If there’s too much Rice Krispies cereal in the treats, the ratio of marshmallow to cereal is thrown off and the treats taste like cardboard (delicious cardboard…but not what we are looking for here).

After MUCH trial and error, I have created my ultimate Rice Krispies Treats recipe.  The perfect amount of ooey, gooey marshmallow, with depth of flavor and texture.  I am so excited to share this recipe with you!

I know I make a lot of no-bake cereal treat recipes here on the blog (sorry Gillian).  No-bake desserts are just so easy to make, and I personally LOVE cereal!  Since Rice Krispies Treats are one of James’ favorite treats, I have made them numerous times.

Well, after making this recipe, I knew I had a winner, when I got the response I did from him and the guys at the firehouse after they got a batch of these treats: “What kind of (expletive) wizardry does she use to make stuff like this?”  “Hands down The.Best.Rice.Krispies.Treats I’ve ever had.”  “Devil woman.”  And James’ response: “The guys are seriously freaking out over the Rice Krispies Treats!  I have to agree…the best ones yet.”  There ya go folks….they said it.  And I am in total agreement 🙂

Grab some marshmallows, some Rice Krispies and my secret ingredient…and let’s get no-baking!

The BEST Rice Krispies Marshmallow Treats

Serves: 30 Cooking Time: 0-minutes

Ingredients

  • 5 tablespoons unsalted butter
  • 8 cups (one 16-ounce bag) mini marshmallows, divided
  • 1 teaspoon vanilla extract (I used Vain Mexican Vanilla Extracted in Cane Rum)
  • pinch of salt
  • 1-ounce white Baker's Chocolate (or a 1/4 cup white chocolate chips)
  • 6 cups Rice Krispies cereal

Instructions

Line a 9x13-inch baking pan with foil. Spray the sides and bottom of the pan with baking spray and set aside.

In a medium-large pot, on the stovetop, add the butter to the pot. Melt the butter over medium-high heat. Once the butter is melted, add six cups of mini marshmallows to the melted butter. Melt the marshmallows into the butter completely, stirring constantly. Once the marshmallows are completely melted, remove the pot from the stove and turn the stove off.

Immediately add the vanilla extract, salt and white chocolate to the melted marshmallows and stir until well incorporated. Stir in the Rice Krispies into the marshmallow mixture, one cup at a time, fully mixing in each cup of cereal before adding the next. At the fourth cup of cereal, add one cup of mini marshmallows, and stir into the mixture until combined. Add the remaining two cups of cereal. Add the rest of the mini marshmallows to the treats and stir until incorporated (you want them to stay mostly whole).

Pour marshmallow treats out into prepared pan. Spray one hand with baking spray to gently push the marshmallow treats so there is an even layer in the pan. Do not push hard on the treats or you will get tough treats.

If cutting the treats into shapes using cookie cutters, wait until the treats have cooled slightly, and use buttered/greased cookie cutters to cut out shapes.

If cutting into squares, wait until treats have cooled and set before cutting into desired sized squares.

Notes

Store treats in an airtight container at room temperature. Treats stay fresh for several days.

These Rice Krispies Treats are ooey, gooey, rich and decadent—thanks to the white chocolate (my secret ingredient).  YOU CANNOT TASTE THE WHITE CHOCOLATE!  The white chocolate just gives these treats the ultimate, over-the-top rich, vanilla-y flavor.  Make these and then have people try and guess the secret ingredient!  No one will figure it out.  It’s awesome 😉

Have you ever cut your Rise Krispies Treats out with cookie cutters??  Just spray your cookie cutter with baking spray and cut your desired shapes out while the treats are still warm and pliable.  Super cute heart shapes!

Snap.Crackle.Pop. Yo!

I love adding some of the marshmallows at the very end, so that you still get chunks of marshmallows in your treats!

    Omg I totally add in too many marshmallows on purpose when I make these with the kids just to make them extra gooey! I never would have thought to add white chocolate….damn! I will def being throwing some in next time now 😉
