Chocolate extract. Chopped up Reese’s Peanut Butter Cups. Butterfingers. What more could you want in a cookie?!?!

As soon as I opened up the box of JEM Butters Foodlyn sent me, I was off to the kitchen trying to figure out how I could use the Chocolate Hazelnut Butter to make an amazing chocolate cookie….and if I was making chocolate cookies, then I would totally need to use the Ballard Extracts Chocolate Extract that Foodlyn sent me too, right?! Ummm…yes….and that combination made for the ultimate, RICH, chocolate cookie. I mean how could anything made with these ingredients turn out bad???
The hardest thing about these cookies was trying to come up with a name for them. PMS Cookies, Chocolate Explosion Cookies, Fudgy Chocolate Cookies, Richy Rich Chocolate Cookies…yeah. This went of for days. And then I settled on The Ultimate Rich Chocolate Cookies. Maybe the name turned out kind of boring, but these cookies certainly are not boring. Plus they are easy to make and no chilling required! I had these made, baked and cooling within 30-minutes!
I scooped two small cookie dough balls and stacked them on top of each other, to make big cookies. Since these cookies are already rich, why not make them big too?
The Ultimate Rich Chocolate CookiePrint Recipe
- 1/4 cup unsalted butter, melted
- 1/4 cup JEM Chocolate Hazelnut Butter
- 3/4 cup light brown sugar, packed
- 1/2 cup white granulated sugar
- 1 teaspoon Ballard Extracts Chocolate Extract
- 1 egg, room temperature
- 2 tablespoons warm water
- 1-1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- pinch of salt
- 1/2 teaspoon baking soda
- 1-1/2 cups chopped Peanut Butter Cups and chopped Butterfingers (or chocolate chips)
Preheat oven to 375-degrees. Line two cookie sheets with parchment paper and set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, cream together the melted butter, chocolate hazelnut butter, brown sugar and white sugar. Beat on medium-high speed until light and fluffy. Scrape down the sides of the bowl as needed. Mix in the chocolate extract, egg and water. Mix until all ingredients are incorporated.
Change the mixer speed to low and slowly add the flour, cocoa powder, salt and baking soda to the wet ingredients. Mix until barely combined. Remove the bowl from the mixer and fold in the chopped up peanut butter cups and Butterfingers to the cookie dough.
Use a small cookie scoop and scoop out two cookie dough balls, and stack them on top of each other. Smoosh the dough balls together. Repeat until all the dough is scooped.
Bake in 375-degree oven, one cookie sheet at a time, for 8-minutes. Do not over bake. Let cookies set on the cookie sheet for several minutes before transferring to a wire rack to finish cooling.
Store cookies in an airtight container at room temperature. Cookies stay soft for several days.
These cookies cooked up crisp on the bottom and edges, but soft in the center for the ultimate bite!
Mmmm…eat these cookies when they are still a little warm and gooey. Or pop one in the microwave later, for a few seconds, to get that fresh-out-of-the-oven taste!
