Unicorn Cupcakes

Cupcakes decorated as unicorns!  I am always a day late and a dollar short when it comes to trends, so hopefully you aren’t too unicorned out yet.  These cupcakes were actually made for my best friends daughters 10th birthday.  These cupcakes are easy to put together and I am including step by step directions so you can make your own magical unicorn cupcakes!

There are several steps to these cupcakes, but the great thing is that the cupcake decorations can all be made ahead of time.  So when you are ready to bake the cupcakes and make the frosting, your decorations are all ready to be put on your cupcakes.  And decorating the cupcakes is my favorite part!

A week before making my cupcakes, I starting making the unicorn horns.  To make the unicorn horns, I bought three boxes of sugar cones (I needed 36 cupcakes), and used a sharp knife to gently cut off the tip of the sugar cone.  After I cut all of the unicorn horns, I used gold food coloring and a paint brush, and lightly painted each horn with a coat of gold food coloring.  I let the horns dry before storing in an airtight container.

Next, it was time to make 36 sets of unicorn ears.  Yes.  I made 72 little unicorn ears out of fondant.  It really doesn’t take as long as you might think though.  The type of fondant you use is important.  If the fondant is too sticky, you will want to pull your hair out.  This was this first time I had used Fat Daddio’s fondant and I LOVED it.  Definitely recommend.

Roll the fondant out to a thin thickness.  Not too thin and not too thick.  See the above picture for an idea of the thickness.  I used a heart cookie cutter to cut out 36 hearts from the fondant and took a knife to cute each heart in half.  I gently folded the heart over, by pinching together the fondant towards the bottom of the heart.  I manipulated the fondant piece to reflect the look of a unicorn ear.

Let the fondant sit at room temperature, uncovered, so fondant ears can harden.  Once hardened, use a small paint brush and pink food coloring to add a touch of pink inside each unicorn ear.  Let the ears sit out at room temperature to stay hard.  I noticed if I put the fondant ears in a ziplock bag, they started to soften, and you want the ears to be hard enough to stand up, when it’s time to stick them on top of the cupcakes.

Now bake your cupcakes!  For these cupcakes, I made Yellow Cupcakes with Mini Chocolate Chips and frosted them with Banana Buttercream Frosting.  Or use your favorite cupcake and frosting recipe (or use a box mix and tub frosting to make life easier!).

Add the sprinkles to each cupcake, place the horn in the middle of the cupcake (a little further back from center) and add your unicorn ears on each side of the horn!
