Boo-tterscotch M&M Cookies

Cookie dough made using dry pudding mix to keep these cookies soft, and the addition of Boo-ttersctoch M&M’s to make a cookie totally appropriate for any Halloween party!  As soon as I saw M&M’s had a “Boo-tterscotch” flavor M&M for Halloween, I knew I had to get my hands on a bag!  Immediately I knew I wanted to make a good ol’ M&M cookie using these.  I mean who doesn’t love an M&M cookie?!  

And these cookies are gooooooood.  I love a nice, soft pillowy cookie, and you know how I achieved that in this recipe?  Instant vanilla pudding powder! Say what?!?!  Yep.  If you have never tried this, then you definitely need to.  The pudding powder gives the cookies such a nice texture, with just a hint of vanilla.  Important note here: we are not making the pudding—just using the DRY instant pudding powder.

The cookie dough flavor is fairly neutral, which I thought would mesh well with boo-tterscotch because I wanted these M&M’s to be the star of this cookie.

I found my Boo-tterscotch M&M’s at Target.  NOTE: if you don’t like the super sweet flavor of butterscotch, get a different flavor of M&M’s.  Any M&M you like, will totally work in these cookies.  These are very sweet, butterscotchy flavored cookies with the Boo-tterscotch M&M’s added to the cookie dough.  These cookies would be such a cute Halloween treat for the kids!

Boo-tterscotch M&M Cookies

Serves: 20 Cooking Time: 11-minutes

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup granulated white sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup egg substitute (or 1 egg), room temperature
  • 3/4 teaspoon imitation vanilla extract
  • 1/4 teaspoon butter extract
  • 1-1/2 cups all-purpose flour
  • 3 tablespoons instant vanilla pudding mix (not Cook and Serve--see picture for reference), DRY
  • pinch of nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup semi sweet chocolate chips
  • 1 cup Boo-tterscotch M&M's (see note for options)

Instructions

Preheat oven to 350-degrees. Line two baking sheets with parchment paper and set aside.

In the bowl of an electric mixer, affixed with the paddle attachment, cream your butter on medium until pale and glossy in color. Scrape down the sides of the bowl and add both sugars. Cream mixture until light and fluffy. Add egg, vanilla extract (I used imitation because it gives it a more bakery flavor, but you can use regular vanilla extract) and butter extract to the sugar mixture. Mix until combined.

Change the mixer speed to low and slowly add the flour, DRY pudding mix, baking soda, nutmeg and salt. Mix on low until just barely combined.

Remove the bowl from the mixer and fold in the chocolate chips and Boo-tterstoch M&M's by hand.

Use a medium sized cookie scoop to scoop dough onto prepared baking sheets. Place cookie dough balls at least a few inches apart.

Bake in 350-degree oven for 10-12 minutes, or until cooked through (may depend on how big or small you make your cookies). Let cookies cool and set on the cookie sheet before transferring cookies to a wire rack to finish cooling.

Notes

Store cookies in air tight container at room temperature. If you can't find these specific Boo-tterscotch M&M's, you can use 1/2 cup butterscotch chips and 1/2 cup milk chocolate M&M's.
