Cake Mix Cookies

Easy Cake Mix Cookies, made using just four ingredients!  And you can use any flavor cake mix you want.

If you don’t bake, then this recipe is perfect for you.  It is super easy and does not require any special tools or appliances.  Just four ingredients, a bowl, a spoon and an oven!

Cake Mix Cookies

Serves: 15-20 Cooking Time: 8-minutes

Ingredients

  • Standard size box of cake mix, any flavor
  • 1/2 cup canola oil
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla extract

Instructions

Preheat oven to 350-degrees. Line a baking sheet with parchment paper and set aside.

In a medium sized mixing bowl, add the entire package of dry cake mix. Stir in the canola oil, eggs and vanilla extract into the cake mix. Stir until combined.

Use a cookie scoop to scoop medium sized cookie dough balls. Option to roll cookies in sprinkles, cinnamon and sugar, coconut flakes, chopped nuts, etc before placing dough balls on prepared cookie sheet.

Gently press the balls down as they do not spread when baked. Bake cookies in 350-degree oven for 8-minutes. Remove cookies from oven and transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature. Cookies stay fresh for several days.

    I made them with coconut pecan cake mix turn out very good love them so I made them with chocolate cake mix they were so dry

      Hi! I am so glad you tried these and that the coconut pecan cake mix cookies turned out.
      Chocolate cake mix can be tricky because it’s notorious for drying out. I haven’t made these cookies with chocolate cake mix, but I would think more oil may be needed to prevent them from drying out.

      I would buy the fudgiest cake mix there is. Was the dough dry or did they bake too long and get dry? I can play with the recipe and put it on the blog! I would need to experiment with the ingredients first before I feel comfortable telling you what changes to make. 🙂

    No the dough didn’t look dry or feel dry I did bake the chocolate a few more minutes longer than I did the butter pecan so that might be the reason they were dry I will try them again to see soon

      Ohhhhh….yeah it was definitely the bake time then. For chocolate cake mix cookies, I would probably take them out of the oven a minute or two sooner. They may look under done, but let them set and cool on the baking sheet. I hope this helps??     Yes that helps so now I made butter pecan cake mix and roll them in pecans it was So good now I’m planning on making them with carrot cake mix I love your cookie recipe got any more like this one send it my way thanks a lot have a good one
