Chocolate Fudge Cake Mix Cookies

Chocolate fudge cake mix, turned into soft, chocolatey cookies instead!  Cake mix cookies are easy to make, are made in one bowl and just a few ingredients are needed to make these.  After making (and loving) my previous cake mix cookies, I decided to make a chocolate cake mix variety, but add a special ingredient to make these extra fudgy!

Chocolate cookies can be tricky to bake, because it is easy to over bake, resulting in dry cookies (sad face).  Follow the directions in this recipe, and I promise you soft chocolate cookie success!  For my cookies, I bought the fudgiest chocolate cake mix I could find.

Adding thick chocolate fudge sundae sauce to these cookies is what makes these cookies soft and fudgy…so don’t leave it out!

Chocolate Fudge Cake Mix Cookies

Serves: 24 Cooking Time: 7-minutes

Ingredients

  • 1 box chocolate cake mix (I used Betty Crocker 15.25-ounce Triple Chocolate Fudge Cake Mix)
  • 1/3 cup canola oil
  • 2 eggs, room temperature
  • 2 tablespoons thick, chocolate fudge sundae sauce (I used Hershey's in the jar)
  • 1 teaspoon vanilla extract (I used Vain Ugandan Vanilla extracted in Vodka)
  • 1/2 teaspoon butter extract
  • Chocolate sprinkles

Instructions

Preheat oven to 350-degrees. Line two baking sheets with parchment paper and set aside.

In a large bowl, add the bag of dry cake mix and mix in the oil. Stir in the eggs, fudge sauce, vanilla extract and butter extract into the bowl. Stir until ingredients are incorporated.

Use a standard sized cookie scoop to drop cookie dough balls into a bowl of sprinkles. Roll dough balls in the sprinkles and place on the prepared cookie sheet. Bake cookies in 350-degree oven for 7-minutes. Remove cookies from the oven and let set on the cookie sheet for several minutes before transferring cookies to a wire rack to finish cooking. Repeat process with the second cookie sheet.

Notes

Store cookies in an airtight container at room temperature. Cookies stay soft and fresh for several days.

I had some leftover buttercream frosting from some cupcakes I had just made, so I plopped a dollop of frosting in between two of these cookies.  It was like a super soft Oreo cookie!  You could always use some store-bought frosting if you wanted to make cookie sandwiches too.  Yum 🙂

    I love how you make cookies out of cake mixes. I also love sprinkles and I love frosting so I will add that dollop of frosting in the center. This sounds like a bit of heaven!

    Ya had me when I saw the picture of those luscious looking chocolate cookies! Love the idea of frosting in between.     I know it is crazy,but I have never made cookies out of cake mixes before…this I have got to try, it looks so great and with the fudge sauce even better. Absolutely love it!

    Oh man, these look so good! I think I’d easily devour a whole pan! I’ve never tried making cookies from boxed cake mix before, but I must say this recipe has me intrigued! As does the idea of “soft oreos” 😀
