Cookies ‘n Cream Brownies

Fudgy, chocolate brownies with chunks of Oreo cookies inside, then topped with a milky-vanilla glaze and crushed Oreo cookies sprinkled on top, for a classic cookies ‘n cream combination but in brownie form!!

We are ALL about brownies in our house and while I have made many versions of brownies, I have never made brownies and included a glaze on top.  Best. Idea. Ever.  Whatever you do, MAKE THESE BROWNIES!!  Sooooooo amazingly good.  Divinely good, thanks to the unsweetened baking chocolate from Divine Chocolate!  Divine’s 100% baking bars are pure cocoa, with zero grams of sugar and vegan!  Divine Chocolate is one of our fabulous sponsors for #Choctoberfest and they sent me their cocoa powder and chocolate baking bars to create recipes with! If you have never made brownies from scratch before, then you really need to try this recipe!  It is so simple to make….just as easy as the box mix, but 100 times better!

Cookies 'n Cream Brownies

Serves: 20 Cooking Time: 28-30 minutes

Ingredients

  • BROWNIES:
  • 10-tablespoons unsalted butter, cut into several chunks
  • 4-ounces unsweetened baking chocolate (I used Divine)
  • 3 eggs, room temperature
  • 2 cups white granulated sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons chocolate fudge sauce
  • 1 cup all-purpose flour
  • 2 cups Oreo cookies, cut into bite sized pieces
  • VANILLA GLAZE:
  • 2 tablespoons butter, melted
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 3/4 cup Oreo cookies, crushed into fine crumbs

Instructions

Preheat oven to 350-degrees and line a 9x13-inch baking dish with foil and spray the bottom and sides of the dish with baking spray. Set aside.

In a large microwave safe bowl, add the butter and the baking chocolate. Microwave the butter and chocolate in 15-second intervals, stopping every 15-seconds to stir the mixture. Microwave only until the chocolate and butter is melted, approximately 90-120 seconds. Remove the melted chocolate mixture from the microwave, and let the mixture sit for several minutes to cool slightly.

After mixture has cooled, add one egg into the mixture and stir egg in completely before adding the second and third eggs. Stir in the sugar, salt, vanilla extract and fudge sauce into the mixture. Stir until all ingredients are incorporated. Stir in the flour. Fold in the Oreo cookie pieces. Pour batter into prepared pan. Bake brownies in 350-degree oven for 28-30 minutes.

Remove baked brownies from the oven and let brownies sit and cool in the pan. Once brownies have cooled, prepare the vanilla glaze.

In a small bowl, mix together the melted butter, sugar, milk, vanilla extract and salt. Add additional milk or powdered sugar to reach desired consistency. Spread glaze onto cooled brownies and immediately sprinkle the fine Oreo crumbs on top. Let icing set for 2-hours before cutting into desired sized squares.

Notes

Store brownies at room temperature in an air tight container.

    How brilliant is this!!!! I totally love the idea that you just took a classic brownie to a different level with the addition of Oreos and hot fudge sauce. So much yum with a tall glass of ice cold milk:)
