Corndog Muffin Cups

Cornbead and hot dogs, baked in a muffin tin, for an easy and healthier alternative to corndogs!  This recipe is portable, kid-friendly food, but is also a great party food.  It takes just a few minutes to make this recipe, since we are using store-bought cornbread mix and hot dogs.  Don’t you just love easy, but oh-so-yummy recipes??!!!

With football season in full swing, on top of school for the kids, and the upcoming holidays, you will definitely want to pin this recipe for later, so you will have it in your back pocket when you need a fun little something to whip up.  And because these Corndog Muffin Cups are baked in cupcake liners, it makes for portable food when you need to eat dinner on the way to sports practice or want easy party/holiday entertaining food that doesn’t require a fork.

Cut your dogs into thin circle slices…

A quick mix of all your ingredients and then pour into cupcake liners…

Corndog Muffin Cups

Serves: 17 muffins Cooking Time: 18-20 minutes

Ingredients

  • 1 (16-ounce) package cornbread mix
  • 1/4 teaspoon ground cayenne, optional
  • 1-1/2 cups water
  • 1 (15.25-ounce) can of sweet whole kernel corn, drained
  • 1 (15-ounce) package hot dogs, cut into small round slices

Instructions

Preheat oven to 375-degrees and line two cupcake tins with 17 cupcake liners. Set aside.

In a large bowl, add the entire package of dry cornbread mix, cayenne, water, drained can of corn and cut up hot dogs. Stir until all ingredients are combined. Use a large scoop to scoop the batter into the cupcake liners, filling the liners all the way to the top.

Bake muffins in 375-degree oven, one cupcake tin at a time, for 18-20 minutes, or until a toothpick inserted in the middle comes out without raw batter on it. Repeat with second cupcake tin. Once muffins are cool enough to handle, remove the muffins from the cupcake tin and place on a wire rack to cool completely.

Notes

Store leftovers at room temperature in an airtight container. To re-heat, place muffins in the microwave for 10-15 seconds. Muffins will stay fresh for 4-5 days.

    SERIOUSLY would have POUNCED on these as a kid. I loved those cocktail weenies in blankets, OMGGGGGGG. Ha! Never had a corn dog before but I have had corn bread and hot dogs separately, both LOVE – sooooooo yahhh!

      Hi Agness! Totally! Or even use vegan dogs or tofu dogs too. But they can totally be made without hot dogs 🙂

    It is pure genius to add corn to the cornbread mix for your muffins. Most folks don’t think about that. Personally I like to add creamed corn, but kernel corn works without adjusting the liquid in the recipe.
    Too cool. Big fan. Keep these treasures coming.
    Btw, a version without meat could include utilizing beans – chickpea, black or your choice.
