CTC Snickerdoodle Blondie Bars

Let’s talk cold cereal for a minute here…I grew up on the stuff.  My parents would let my sister and I each pick out a box of cereal for the week, that was ours to eat for breakfast.  We were definitely a cold-cereal-and-milk-for-breakfast kind of family.  I never had a Pop Tart until like six months ago (and then I became obsessed with them).  Cold cereal is just an easy breakfast during the week and something us kids could easily “make” ourselves without any help from mom and dad.  What were/are your favorite cereals?  Growing up I loved a varied collection of cereals—Grape Nuts (I was such a weird child!), Cinnamon Life, FRUITY PEBBLES, French Toast Crunch, Captain Crunch with Crunchberries and of course Cinnamon Toast Crunch (CTC).  **Confession** I eat Cinnamon Toast Crunch cereal dry, every morning, with my coffee.  Oh I am still such a child hahahaha.  It’s funny that walking down the cereal aisle at the grocery store actually brings back so many fond memories of my childhood.

So these snickerdoodle bars…because I put Cinnamon Toast Crunch of top of them, I think you could totally eat them for breakfast, right?  I think so!  Have you ever had a blondie before?  They are pretty amazing.  Blondies have a cookie like texture and they get their amazing flavor from the brown sugar.  You only use brown sugar in these and it makes for a very rich, flavorful bar.  I love these blondies because they are super easy to make and everyone always loves them.  I guess ((heavy sigh)) the Cinnamon Toast Crunch on top could be optional if you don’t have it on hand, but I highly suggest buying a box.

CTC Snickerdoodle Blondie Bars

Serves: 24 Cooking Time: 30-minutes

Ingredients

  • 2 2/3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups light brown sugar, packed
  • 1 cup salted butter, room temperature
  • 2 eggs, room temperature
  • 1 tablespoon vanilla extract
  • Topping:
  • 2 tablespoons white granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups gently crushed Cinnamon Toast Cereal (leave some big pieces!)

Instructions

Preheat oven to 350-degrees. Line a 9x13-inch baking pan with foil and spray with cooking spray. Set aside.

In an electric mixer using the beater attachment, beat yo butter on medium until it's creamy and pale in color. Scrap down the sides of the bowl and add your two cups of brown sugar. Beat the butter and sugar on medium until it's light and fluffy (1-2 minutes). Scrap down the sides of the bowl and add one egg into the sugar mixture. Once the egg is fully incorporated into the mixture, add your second egg. Mix until fully incorporated and then add your tablespoon of vanilla extract, 1/2 teaspoon of cinnamon and 1/4 teaspoon of nutmeg. Mix until combined.

With the mixer on sloooooooooow, slowly add your flour and baking powder, mixing only until just combined. Over mixing flour will lead to a tough dough.

Use a rubber spatula to ensure all the ingredients are fully incorporated and scoop your dough into your prepared 9x13-inch baking pan. This is a thick and sticky cookie-like dough. Spread dough evenly into the pan (a trick I use: I get a little water on my fingers to push the dough down without the dough getting stuck to my fingers).

In a small bowl combine your cinnamon sugar topping---just the cinnamon and sugar here. Gently sprinkle the the cinnamon sugar mixture over the entire pan of blondies.

In a ziplock bag, gently crush 1 1/2 cups of Cinnamon Toast Crunch cereal. You want big pieces and small pieces! Sprinkle the cereal over the blondies and gently press into the dough.

Bake blondies for 30-minutes.

Let blondies set before cutting into desired sized squares. These bars will set up more as they sit, so if they don't look done after 30-minutes, it's okay. They just need some time on the counter to set up. Plus I would rather have an underdone and gooey cookie, than a dry and crumbly one.

Notes

Store at room temperature in an air tight container. These stay fresh for several days and are great for bake sales!

    Apple Cinnamon Cheerios for me – and I definitely agree dry is best and w a cup of coffee- even better!!
    Anything Snickerdoodle is my favorite- love the idea of a bar and the added crunch of the cereal- yum!! Sign me up to taste test 😊

      I might have to come up with some type of Apple Cinnamon Cherrios treat for you then! Funny because I used to love that cereal as a kid too…you just reminded me of that! XOXO!
