After that, you can pour the now-caramel over the popcorn and let it cool. You can shape the popcorn into two-inch balls by rolling it with your hands that are greased with butter.

- 2 ripe persimmons;
- 1 2/3 cups of flour;
- 1 ½ tablespoons pumpkin pie spice;
- 1 tablespoon baking soda;
- ½ tablespoon kosher salt; 2/4 cups of brown sugar;
- ½ cups of butter;
- Lemon juice from one lemon;
- 1 ½ cups powdered sugar;
Blend the persimmons until smooth and set aside. Then, you’ll make the cookie dough by whisking the flour, pumpkin pie spice, baking soda and salt. In another bowl, beat the sugar and butter with a mixer, then add the vanilla, half of the persimmon puree, and the lemon juice. Mix on a slow speed, and then add the flour.
