Healthy Chocolate Cookie Dough Bites

Healthy chocolate cookie dough bites are safe to eat raw and are made using date sugar, date paste, cocoa powder and a few other simple ingredients. Easy to mix up and have on hand when you are craving a chocolate treat (but without all the calories).

I have batches of these stocked in my refrigerator and freezer to munch on at all times. Date sugar replaces regular sugar (you could use brown sugar or a sugar substitute) and date paste instead of butter. You can buy date paste (I use the kind from Let’s Date) or you can make your own by blending fresh or softened dates. Just add the water last if you make any changes, so you can control the consistency.

If you are worried about eating raw flour and salmonella, then microwave your flour for 15-seconds before adding to the batter.

Use sugar free chocolate chips or even chunks of chocolate protein candy bars like these ones from Hormbles Chormbles if you want added protein to your cookie bites.


Healthy Chocolate Cookie Dough Bites

Ingredients

  • 1/4 cup date paste
  • 1/4 cup date sugar
  • 1 teaspoon vanilla extract (I used Rodelle Baker’s Vanilla)
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder (I used Rodelle)
  • 1/2 cup all-purpose flour
  • 1/4-1/2 cup water (add only enough to reach cookie dough consistency that’s easy to scoop into balls)
  • 2 tablespoons sugar free chocolate chips

Instructions

In a large mixing bowl or in a stand mixer add all of the ingredients up to the water and mix until somewhat combined. Slowly add the water to your desired consistency. The batter should be firm enough to scoop into balls. Fold in the chocolate chips.

Use a small cookie scooper to scoop cookie dough balls.

Place in an airtight container in the refrigerator or can be frozen.

Notes

Last for several days in the refrigerator. I split the batch in two and freeze half and then once I have eaten all the ones in the fridge, I put the frozen ones in the fridge to thaw.
