Healthy Soda Bread

This baking soda bread has NO yeast, no dairy, no eggs, no sugar and no fat in it! And no stand mixer or bread machine is required to make this!  Sound impossible?  It’s not and it tastes pretty damn good too!

So with the pandemic and all, there has been a scarcity of ingredients readily available.  Whether it has been butter, eggs, yeast, etc it seems for some reason everyone wants to hoard all these ingredients.  Or maybe everyone is just baking a lot??  Anyways!  Let’s take it back to the pioneer days and make bread with what we got on hand!

Now you can totally use whatever milk you keep on hand.  This works with any type of milk.  I used unsweetened almond milk (the 30 calorie variety and unflavored).  We are going to add white vinegar to the milk to curdle it to get the effects of buttermilk.

Healthy Soda Bread

Serves: 8-10 slices Cooking Time: 23-25 minutes

Ingredients

  • 1 cup milk (any variety---I used unsweetened almond milk)
  • 2 tablespoons white vinegar
  • 2-3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

Preheat the oven to 400-degrees and line a baking sheet with parchment paper and set aside. In a small bowl, add the milk and white vinegar. Allow the mixture to sit for 10-15 minutes or until curdled.

In a large bowl stir together the flour, baking soda and salt. Once the milk has curdled, slowly stir the milk into the dry ingredients. The dough will be sticky. Gently knead the dough 10 times and dump out onto prepared baking sheet.

Form the dough into the size of a loaf of bread, approximately 3-inches by 12-inches (doesn't have to be exact). Use a sharp knife to make slits across the top.

Bake in 400-degree oven for 23-25 minutes. Bread does not get golden brown. Remove bread from the oven and let set for an hour before cutting into slices. Or just rip warm chunks of bread off fresh from the oven and eat. You do you.

Notes

Store bread in an airtight container at room temperature. I cut this loaf in half and tightly wrap half of the loaf in plastic wrap and then place it in a freezer safe Ziplock bag and freeze.

Since all the ingredients that go into this are white, and there’s no fat in the bread, it doesn’t really brown much after baking.  Next time I make it, I will make this bread I will try it with an egg wash to see if I can get some color on it, or you could even throw the broiler on high and pop the bread under it for a few seconds.  It was just me eating this bread, all alone, quarantined in my house so I didn’t much care that the bread was white as hell.

 

 

If you want to jazz this bread up, you could even add some herbs or chopped garlic to the dough before baking!  This is just a base recipe and the flavor additions are endless!

      Thanks Katherine! I definitely jumped on the bread baking bandwagon heheheh. But I needed a healthier version, because as much as I love cookies, bread is my true weakness!

      When it comes to bread, it has to be easy or I get intimidated! This would be something fun to make with the kids too! And you are so good with flavors and spice, so you could totally jazz it up!

    A simple bread for these times! Im doing a lot of baking, but like to save all of the hard-to-get items for sweets. So this bread seems ideal for me! Love this!

    I’ve never seen soda bread before! Beer bread, yes (I see you have a recipe for it as well), but not this. It’s fascinating to me that bread can be made this way. I don’t always like having a store bought loaf of bread around the house, so now I know what to do when we absolutely need a loaf…I’m saving this recipe! Of course I’ll have to try it right away, as well. It is, after all, like you said…quarantine…

      Thank you! This is so easy! I can’t be trusted around a loaf of bread hehehe. Seriously my weakness. So I usually cut this into chunks, wrap the chunks in plastic wrap and put in a ziplock freezer bag. Then I just pull out a hunk of bread a few hours before I need it. Keeps it fresh and makes me practice portion control hehehe. Have a great weekend! XOXO
