Chocolate Chunk Cookies

Chocolate Chunk Cookies made using cocoa powder and chocolate fudge sauce, whole Hershey’s Kisses and semi-sweet chocolate chips.

 

Chocolate Chunk Cookies

Serves: 20 cookies Cooking Time: 8-9 minutes

Ingredients

  • 1/4 cup canola oil
  • 1 tablespoon unsalted butter, slightly melted
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon chocolate fudge sauce
  • 3/4 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • pinch of salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cornstarch
  • 1 cup semi-sweet chocolate chips
  • 20 Hershey's Kisses (left whole)

Instructions

In the bowl of your stand mixer, affixed with the paddle attachment, add the canola oil, butter, white sugar and brown sugar and mix on medium-high speed until light and fluffy. Scrape down the sides of the bowl as needed. Beat in the egg, vanilla extract and fudge sauce into the mixture.

Change the mixer speed to low and slowly add the flour, cocoa powder, salt, baking soda and cornstarch and mix until barely combined. Remove the bowl from the mixer and use a rubber scraper to ensure all ingredients are incorporated. Fold in the chocolate chips and Kisses. Put the bowl of cookie dough in the refrigerator, or freezer, for an hour to chill.

Once your dough has chilled, preheat the oven to 350-degrees and line a large cookie sheet with parchment paper. Use a large cookie scoop to scoop large cookie dough balls onto the cookie sheet. Leave a few inches between the dough balls because the cookies will spread.

Bake cookies in 350-degree oven for 8-9 minutes. Cookies may appear underdone, but they continue to bake on the cookie sheet after you remove them from the oven. Let cookies cool on the cookie sheet until set, and then transfer to a wire rack to finish cooling completely.

Notes

Store cooled cookies in an airtight container at room temperature. Cookies stay fresh for 5-6 days.

 

 

I nicknamed these “Horrible Chocolate Cookies” because these are the chocolate cookies you need all for yourself when you are having a horrible day! But really they taste amazing.

    I love the name and agree with all of the reasons that they are “horrible”. The real story behind the name was pretty good too. I’m glad that you made something to replace those cookies. Isn’t it great to know that we can take something that is “horrible” and make it great – not just when cooking, but in life too! Thank you for the recipe!
