Pumpkin Chocolate Chip Cookies

Soft, fluffy pumpkin cookies, full of pumpkin pie spice and chocolate chips.  The perfect pumpkin cookie that everyone LOVES.  These cookies are easy to make and no chilling is required.  You are just minutes away from the delicious smell of pumpkin cookies baking in the oven…what are you waiting for?!  

This is a top secret recipe for pumpkin chocolate chip cookies.  And it’s not my recipe.  As you might have figured out by the name, this recipe comes from Kara.  I begged and begged (and begged) my friend Kara to divulge her Pumpkin Chocolate Chip Cookie recipe to me, because they are seriously the best.  Kara makes these cookies all the time for us at work and they quickly disappear.  One of the guys we work with, has even declared these cookies the only pumpkin cookie he likes.  And trust me, I tried to make my own version of pumpkin chocolate chip cookies, but they just didn’t compare.

So after years of asking, and me being annoying, Kara finally caved and gave me her top secret Pumpkin Chocolate Chip Cookie recipe.  And as soon as Kara gave the recipe to me, and I had it in my hot little hands, I said, “You know I have to put this on the blog right?!”  Kara stopped and just looked at me, and then I looked at her with pleading eyes.  Luckily, I can be very convincing and Kara agreed to let me share her recipe here with you!

Pumpkin Chocolate Chip Cookies

Serves: 30 Cooking Time: 15-minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1-1/2 cups white granulated sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 1 egg, room temperature
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2-1/2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips

Instructions

Preheat oven to 375-degrees. Line a cookie sheet with parchment paper and set aside.

In the bowl of your stand mixer, affixed with the paddle attachment, cream the butter until pale and glossy. Add the sugar and cream the butter and sugar together until fluffy, on medium-high speed. Add the pumpkin to the mixture and mix until incorporated. Scrape down the sides of the bowl as needed. Mix in the egg and vanilla extract.

Change the mixer speed to low and slowly add in the pumpkin pie spice, salt, baking soda, baking powder and flour. Mix until just combined. Fold in the chocolate chips.

Use a small cookie scoop to scoop cookie dough balls out onto prepared cookie sheet. Leave a few inches in between cookies to allow for spreading. Bake cookies in 375-degree oven for 15-minutes. Let baked cookies set on the cookie sheet for several minutes before transferring to a wire rack to finish cooling.

Notes

Store cookies in an air tight container at room temperature. Cookies stay soft and fresh for several days.
