No Bake Chewy Granola Bars

THE BEST….no bake….easy to make….chewy granola bars!  Just like the Quaker granola bars you can buy at the store, but without all those additives and preservatives, and with the ability to customize the flavors to your liking!  Everyone who tried these granola bars declared them the BEST granola bars they had ever eaten.  So if you have a microwave and 5-minutes, you definitely need to give these a try!

WHAT YOU NEED TO MAKE THESE:

  • creamy peanut butter
  • honey
  • brown sugar
  • vanilla extract
  • crispy rice cereal
  • quick oats

ADD-IN’S:

  • M&M’s
  • chocolate chips
  • crushed granola

In my granola bars, I used My Favorite Indulgence Classic Almond Granola.  If you do not have a bag of granola on hand, but want to make these, just add an additional 1/2 cup of quick cooking oats and an additional 1/2 cup of the crispy rice cereal.

No Bake Chewy Granola Bars

Serves: 12 bars Cooking Time: 1-minute

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract (I used Rodelle Gourmet Vanilla)
  • 1/4 teaspoon salt
  • 1-1/2 cups crispy rice cereal
  • 1/2 cup quick cooking oats
  • 1 cup granola, crushed (I used My Favorite Indulgence Classic Almond Granola)
  • 1/2 cup M&M's
  • 1/2 cup chocolate chips

Instructions

Line a 9x9-inch square baking dish with foil or parchment paper, and spray the bottom and sides with baking spray. Set aside.

In a microwave-safe bowl, add the peanut butter and honey. Microwave for 1-minute. Remove the bowl from the microwave and stir in the brown sugar, vanilla extract and salt until the mixture is smooth.

Stir in the crispy rice cereal, granola and oats. Stir until all ingredients are incorporated. Fold in the M&M's and chocolate chip (or your desired add-in's. Pour mixture into an even layer in the prepared pan.

Refrigerate the granola bars for at least 2-hours before cutting into desired sized bars or squares.

Notes

Store granola bars in an airtight container in the refrigerator for a firmer bar, or for a softer texture, store at room temperature.

    Your no bake granola bars look fabulous. We have a similar recipe, but I need to remember to put the M & M’s in when the ingredients aren’t so hot that it melts them!!!

    There’s nothing better (or easier) than a no-bake treat, Kelly! I love it for those end-of-day sweet cravings! These look and sound so hearty and chewy! I love the idea of granola in them, too!
