Nutella No Bake Cookies

I looooove no bake cookies!  Not only are they super yummy, they are quick to make too!  And no baking!  I know there are a million gazillion no bake cookie recipes out there in the blogosphere, but I have found the PERFECT recipe for no bake cookies that will give you soft, decadent no bake cookies.  No dry, crumbly no bake cookies that are hard as rocks here!  You must read on to discover my secrets!!

I started off making these Nutella No Bake Cookies with the intention of them actually being Mocha No Bake Cookies.  But sometimes things don’t always work out the way you think they will, when experimenting in the kitchen.  But don’t worry…these cookies are amazing.  I just have to hit the drawing board again to try and come up with my mocha spin off of these cookies.  And I will make you my classic version of these cookies soon too!

When I think of no bake cookies, it brings me back to 2005.  I was a young cop working the night shift, 4:30 PM to 3:30 AM, and would get home from work around 4:00 in the morning.  Sometimes you just want a yummy no bake cookie at 4:00 in the morning, you know?  Oh that’s just me???  Whatever.  So…I would whip up a batch of these no bake cookies real quick, eat a few (with a huge glass of milk), while I watched television for a little bit before bedtime.  If you have ever worked night shifts, then you understand the struggle with keeping your meals normal.  I would eat “dinner” at 10 or 11:00 at night when I worked those crazy hours at work.  And by dinner, I mean pancakes at IHOP with my crew.  Yesssss.  Hahahaha.  So really, my 4AM no bake cookie chow down, was equivalent to an after-dinner dessert 🙂

Remember I was trying to make Mocha No Bake Cookies??  So when I made these cookies, I mixed in two teaspoons of instant espresso powder to the pot, while the butter was melting with the sugar.  But you couldn’t taste the coffee flavor.  However, espresso powder can intensify the chocolate flavor in recipes, so add it if you want, or leave it out if you don’t have it.

Google no bake cookies and you will see a varying degree of cook times once your mixture comes to a boil, and wide ranges of the types of milk people use to make no bake cookies.  I have tried whole milk, evaporated milk and fat free milk.  What makes this recipe the best?  Unsweetened Vanilla Almond Milk (the 30 calorie kind).  I will never make a no bake cookie using any other type of milk.  I only drink almond milk and if you have never tried it, you totally need to.  To me it is sweet and creamy, and thicker than fat free milk.  A total treat!!  Silk is my favorite brand.  I will save you the trouble of trying cashew milk though.  Um.  Yuck.

Nutella No Bake Cookies

Serves: 20 Cooking Time: 1-minute

Ingredients

  • 6 tablespoons unsalted butter
  • 1/2 cup unsweetened vanilla almond milk, room temperature (or any milk)
  • 2 cups white granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup hazelnut spread (Nutella)
  • 3 cups quick cooking oats

Instructions

Tear off a long piece of foil or parchment paper, and place on the counter for your cookies to set on.

In a medium-sized sauce pot, on medium heat on your stovetop, add the butter, almond milk, sugar and cocoa powder to the pot. Stir mixture regularly. Once mixture comes to a boil, set timer for one minute. Stir the mixture continuously for that entire minute (mixture should be at a full, rolling boil during that time). Do not boil for longer than one minute!

Remove mixture from the stove and immediately stir in the vanilla extract and salt. Add the hazelnut spread into the hot mixture and stir until it is mostly melted and incorporated into the mixture. Add the quick oats one cup at a time to the mixture, stirring each cup in fully before adding the next cup. When adding the last cup of oats, add the oats very slowly. If it looks like your cookies will be too dry, do not add the entire cup of oats. Your mixture should still look wet and cookies will set once they are scooped out onto the wax paper.

Use a standard sized cookie scoop to drop scoops of cookie onto the foil. Before the cookies set, use the back of a metal spoon to shape the scoops of cookies so they are flat and round like a regular cookie.

Notes

Store in an airtight container at room temperature. No bake cookies stay fresh for 3-4 days.

I scooped some huge cookies using my ice cream scoop.  These are pretty decadent cookies though (ummm Nutella!), so maybe a small cookie scoop would be better 🙂

I think these cookies would be perfect with a cup of coffee!  If you have never eaten a brownie or chocolate cookie with a cup of coffee, you need to try it.  It is an amazing pairing!

I have no idea what happened to the other half of that cookie 😉

So there ya go…my recipe for the best no bake cookies ever.  Don’t forget my tricks to keeping these cookies rich, soft and decadent: almond milk and only boiling the mixture for one minute!  I think these cookies are good at any time of the day!  Make them now to have on hand for those 4AM cravings hehehe.

So here I am mouth watering, begging for you to move back home . . . so I have to ask . . . why didn’t you take up baking instead of boys when you were in high school?     Is that expresso powder in the picture? Is it used in place of the cocoa?

      Yes…I had added two teaspoons of espresso powder to try and make these cookies have a mocha flavor, but it did not really come through. Make the recipe as the recipe is written out. Option to add the espresso powder as an additional ingredient. It can help to bring out the chocolate flavor. Read the narrative in the post on adding the optional espresso powder for directions. 🙂

    I love all the different no-bakes you come up with babe but these have to be one of my favorites. I mean how can you go wrong with Nutella?! These were sweet hearty cookies that the guys at the firehouse LOVED with their morning coffee!

      I was so unsure about this combo of no bake cookie that I came up with, so that makes me so happy that you loved them and all the guys liked them too. They definitely go great with a cup of coffee. And there’s oats in them, which is like oatmeal…so breakfast!
