Peanut Butter Crunch Bars

Cap’n’s Peanut Butter Crunch Bars!  My obsession with using cereal in desserts has returned.  Cap’n Crunch has always been a favorite of mine, but I have never had the Peanut Butter Crunch before.  This was just a quick recipe I whipped up before I ran off to the gym, because I had marshmallows I needed to use up!  I bought the Peanut Butter Crunch not to eat as cereal for breakfast, but in an attempt to replicate a cookie one of my best friends had while she was in Maui.  Aliesha was in Maui when she texted me to tell me about these amazing cookies she had while she was there….the Elvis Cookie and the Pumpkin Pie Cookie.  Aliesha took a picture of the ingredient list for each cookie and sent it to me.  The Elvis Cookie included Peanut Butter Crunch cereal.  So a little kitchen experimentation  coming soon as I try to replicate the Elvis Cookie.  But— I only need a couple cups of the Peanut Butter Crunch cereal to make the cookies and I just can’t waste food, so I had to do something with the rest of the box of cereal.  So cereal treats it was!

Cap'n's Peanut Butter Crunch Bars

Print Recipe
Serves: 24 Cooking Time: 5-minutes

Ingredients

  • 3 tablespoons butter
  • 3/4 cup creamy peanut butter
  • 1 10-ounce bag of marshmallows (or 6 cups of mini marshmallows)
  • 1 teaspoon vanilla extract
  • 6 cups Cap'n Crunch Peanut Butter Crunch Cereal
  • 2 cups semi-sweet chocolate chips, divided

Instructions

Line a 9x13-inch baking dish with foil and spray with cooking spray. Set aside.

In a medium sized pot, put butter and peanut butter in the pot, and melt over medium heat on the stovetop. Stir. Once melted, add the marshmallows and continue stirring until completely melted. Remove from stove and immediately add vanilla extract and stir. Add the six cups of cereal, stirring in one cup at a time. Add 1-1/2 cups of the chocolate chips (reserve the other 1/2 cup of chocolate chips for the top) to the cereal mixture and stir to incorporate. The chocolate chips will melt to create perfect gooeyness.

Pour the cereal mixture into the prepared pan and gently spread to an even layer in the pan. Top with remaining chocolate chips.

Let set at room temperature and cut into desired sized squares.

Notes

Store at room temperature in an air tight container.

James snuck in another picture while I wasn’t looking…here’s a little behind-the-scenes picture of me trying to make these brown blobs of goodness look appetizing hehehehe 🙂  James was very happy to get the entire pan of these PB Crunch Bars to take into work.  The guys started eating them as soon as James walked into work with them (he goes in at 0630 hours)…but I mean there’s cereal in these, so it can be considered breakfast, right?!?!

    I was able to steal one when visiting James at the station- so seriously yummy- crunchy and creamy with pb and chocolate melted together- a perfect treat!! 😍

    Cut the recipe in half since my husband I are empty nesters. My college children left a box of Captain Peanut Butter Crunch at home. The recipe turned out great. Thanks for sharing.
