Random Ramblings – Sixth Edition

Happy weekend y’all!  Is everyone ready for Christmas?  I think I am…I still have a little bit more shopping to do, but mostly I am just waiting for UPS to deliver everything I ordered online hehehe.  I still have so many Christmas recipes I want to make and share with you guys too!!  This weekend I think I will bake up some chocolate sugar cut out cookies.  One of my Instagram friends (Gwyn) was asking me if I had a recipe for chocolate sugar cut out cookies, and I don’t, so I have to create one!  Plus, then I will get to use my Dough-EZ rolling mat and all of my cute Christmas cookie cutters!

I am so annoyed.  My website was down for 10 HOURS yesterday!!  It was beyond ridiculous.  I guess Blue Host was having some major issues.  So my apologies to anyone trying to get on my website yesterday.

Baking is a science…if you don’t follow a recipe EXACTLY and with the SAME ingredients listed in the recipe you are using, you will get a different outcome.  There’s so much science and preciseness that goes into baking (which is why I love baking).  The Baking ChocolaTess has a great guide on how to measure flour correctly.  You can read it here.  And after you are done reading her guide, go back and check out her website.  She has so many yummy recipes 🙂

 

I just want to eat cookies.  All the cookies…..and I probably should.  While everyone else is talking about how they are trying to avoid the holiday weight gain, my doctor told me she wants me to gain 4 more pounds this month.  I gained 3 pounds last month and am hating every bit of it, but I know I have to do it.  If you are new to my site, then you can check out this post to see what the hell I am talking about.  Recovering from Anorexia will be a lifelong battle for me, but I am determined to beat it.  I feel sad to see several of the girls I was at Eating Recovery Center with last Spring, back in treatment again.  That’s how easy it is to slide back into old habits.  It’s hard for me to see my girls struggling, because I think they are all beautiful and amazing women (love you Alice, LB and Kaitlyn!).  But I am trudging on and progressing.  I gave myself a January 1st deadline to get my eating disorder shit in check 😉  Want to know more about what it’s like to have an eating disorder?  Check out this blog post I found, which is spot on.

Yup…I am back to making desserts using cereal.  My obsession.  Cereal killer.  Recipe coming soooooooooon!

And then because this pretty much sums up how I feel about math.  The math struggle is real, y’all!

And then these two angels….they make my world go round.  I watched Miss G and Miss A for my sis, for a couple hours the other morning.  Miss A (my little redhead) is such a snuggler!  And Miss G looks just like Elsa from Frozen!  Wendy texted me to tell me Miss G wanted to dress up for me, so G came over in her Elsa outfit and had her blond hair braided just like her Elsa doll.  She is so precious.  But don’t let this picture fool you—I am still finding fishy crackers under the couch and little fingerprints everywhere.  This picture was taken after we had already ran around the house, played and made messes (errr….memories).  Love my nieces!

I am trying to narrow down the things I will be baking for my family holiday bake day.  I will make my Peanut Butter Cups for sure and I already made two batches of dough for the bestest, softest cookies ever!  For one of the doughs, I put chocolate chips and crushed up Oreos in and the other batch of dough I put chopped up Kit Kat’s, Pirouline cookie pieces and M&M’s.  I put both of the unbaked doughs in the freezer and will bake them up the day before our family get-together.  Recipe coming soon!     I consider myself “mostly recovered” but still struggle with disordered eating. It has been a 22 year struggle for me. I feel for you! Thank you for this awesome and thoughtful roundup. <3

      Thanks for reading and sharing! I know I will forever be dealing with my eating disorder, but hopefully I will never go back to my worst. One day at a time, right?! You understand….anyone with an eating disorder gets it. Otherwise I think it’s hard for other people to fully understand. XOXO

    That rolling mat looks great! You should try WP Opt for hosting. I was previously with GoDaddy and it was a similar nightmare experience. WP Opt is incredible – so easy, cheaper than what I was paying and super reliable. The guy who runs it is super responsive and SO nice.
