Copycat Starbucks Blueberry Scones

From scratch scones are EASY to make!  Flour, sugar, butter, egg, heavy cream, vanilla extract and of course blueberries are the main staples in this recipe.  And in under 30-minutes you can have piping hot, fresh scones straight from your oven!

You can make larger scones or mini ones.  The recipe and bake times are the same for either option.  If you want to make mini scones, divide your dough into two equal rounds and pat into a circle that is 1-1/2 inches tall.  If making larger scones, pat your single round until it is also 1-1/2 inches in height.

Sprinkle raw sugar on top before baking…

Copycat Starbucks Blueberry Scones

Serves: 8-16 Cooking Time: 20-24 minutes

Ingredients

  • SCONES:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 6 tablespoons white granulated sugar
  • 1/2 cup cold, unsalted butter, cubed
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh blueberries
  • TOPPING:
  • 1 egg
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
  • raw sugar

Instructions

Preheat oven to 375-degrees. Line a large cookie sheet with parchment paper and set aside.

SCONES: Sift the flour, baking powder, salt, nutmeg and sugar in a large bowl. Use a pastry cutter to cut the cold butter into the flour mixture. In a small bowl, whisk together the egg, vanilla extract and heavy cream. Stir the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries. Dump the scone dough out onto a lightly floured surface and pat into an 8-inch circle, approximately 1-1/2 inches high. Cut into 8 pie shaped slices and transfer to prepared cookie sheet.

TOPPING: In a small bowl, whisk together the egg, cream and vanilla extract. Use a pastry brush to lightly brush the top of each scone. Sprinkle raw sugar on top of each scone.

For best results, I recommend letting the scones chill in the refrigerator for an hour before baking. Bake scones in 375-degree oven for 20-24 minutes or until golden brown. Remove baked scones from the oven and let set for several minutes on the baking sheet before transferring to a wire rack to finish cooling.

Notes

Store scones in an airtight container at room temperature.

    These look wonderful! I wish I worked with you!!!! haha I used to get the scones at Starbucks (before I went GF) and they were usually really good so I’ve really missed them. But sometimes I did find them rock hard or too dry, so I know these would be a gazillion times better. I lovvvve anything blueberry but scones with bits of bursting blueberries are one of my faves. I am drooling just looking at your photos and now I want a scone! haha I am going to try this with my GF flour. Yummylicious 😀

    Could I replace the heavy cream with something in this recipe? I will use the vegan butter I have to replace the butter, but I need a replacement for heavy cream to make them dairy free.

      I would try coconut milk or coconut cream instead of the heavy cream….I have never tried it though! Let me know if you try it. I am curious to see how they turn out without the heavy cream!

      You can try whole milk or whatever milk you have on hand. I don’t guarantee it will work the same though….heavy cream has more fat and is thicker. So watch the consistency as you add the milk! Let me know!!

    Hi – I live in Israel and every visit to the US I buy my scone… so now you allow me to enjoy a better one here at home! I do have a question- not sure about the butter . You add it cold and it melts when you knead? Do you use a mixer or with your hands?

      I sent you an email back, because that seemed quickest, but I will answer your comment here for anyone else who has the same question! You want to cube the butter and use a pastry butter or two forks to incorporate the butter into the flour. There will be chunks of butter and that’s totally fine…there’s no way to get the butter completely incorporated into the dough! And you definitely don’t want the butter to melt. I actually pop my scones into the fridge to chill for 30-minutes sometimes before baking. The colder the ingredients they are when they bake, the flakier and more tender your scones will be. DEFINITELY DON’T KNEAD THE DOUGH!!! It will get tough! Hope this helps!! XOXO

      I would let them defrost first by setting them out on a paper towel or dish towel, in order to soak up any excess moisture or water. That way your scones don’t get soggy!

    My husband LOVES blueberry scones!! They are his favorite and he loves the ones from Starbucks. I saw this recipe and thought I would try it. He finished his first scone and said I was the absolute best cook ever. Thank you so much for this recipe. What a hit it was.

      That’s awesome!! And makes me so happy! You can definitely try freezing them. I would wrap them individually in plastic wrap and then place in a freezer storage bag. Then you can take one out at a time to defrost on the counter. They may need a few seconds in the microwave before eating and after defrosting. Let me know if you freeze them!

    These turned out good, but I have two tips to make it easier to work with.
    1. Place blueberries in with the four before adding the ingredients. I saw two other bakers do this and it makes it much easier to incorporate them evenly without over handling the dough.
    2. If your dough is very wet, like mine, then place it in the refrigerator for 30 to 60 min.

      Yes!! Great tips! I have made this recipe so many times, I also discovered that chilling the scones for a bit before baking made them flakier and much better. I will have to edit the post.           You’re welcome!! I make these all the time and everyone loves them! Let me know what you think after making them! I definitely recommend chilling the scones before baking for 1-3 hours. It makes them more tender and flaky. Also, if you toss your blueberries in a bit of flour, that will prevent them from sinking during baking. Enjoy!
