Mint Chip No Churn Ice Cream

No churn ice cream is an easy ice cream recipe that does not require an ice cream maker, uses only four-ish ingredients and can be made in mere minutes (freezing time not included…sorry).  Today’s no churn ice cream is mint flavored with the addition of mint chips and chocolate chunks.  Creamy, dreamy mint chip ice cream, perfect for those hot summer days!

I used the rest of my mint chips that I had leftover from my Mint Chip Brownies I made recently, but you can use all chocolate chips.

Mint Chip No Churn Ice Cream

Serves: 10 Cooking Time: 0-minutes

Ingredients

  • 2 cups heavy whipping cream, cold
  • 1/2 teaspoon peppermint extract
  • green food coloring (optional)
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup mint chips (optional)
  • 1 cup chocolate chips

Instructions

Line a 9x5-inch loaf pan with parchment paper (if you don't have reusable ice cream containers), and set aside.

In a small bowl add the sweetened condensed milk, peppermint extract and green food coloring and stir until ingredients are fully incorporated. Set aside.

In the bowl of a stand mixer, affixed with the whisk attachment, add the heavy whipping cream and whip on medium-high speed until you reach stiff peaks. Stiff peaks occur as the mixture thickens and will hold the shape of a peak when you lift the whisk from the mixer. This only takes 2-5 minutes.

Remove the bowl from the mixer and fold in the sweetened condensed milk mixture to the whipped cream. Fold in the mint chips and chocolate chips.

Pour ice cream into the loaf pan or reusable ice cream containers. Add additional chocolate chips on top of the ice cream, and gently push into the ice cream (optional). Cover ice cream with plastic wrap and foil and place in the freezer to set. If using reusable ice cream containers, just put the lids on. Ice cream takes 4-5 hours to set.

Notes

Store ice cream in the freezer in an airtight container. If stored properly, ice cream will stay fresh for 1-2 weeks.

    I like the green mint chips and the chocolate chunks together. We love mint chocolate chip ice cream and this recipe sounds like a keeper. I need to make ice cream more instead of buying it. I remember making Ice Cream when I was growing up and taking my turn on that ice cream maker hand crank (fortunately there were a lot of us to take turns). The Ice Cream was always so good. I hope that you enjoyed your Fourth of July. (I’m thinking that you did if you had this Ice Cream).

And when I explained it him, he started telling me about making ice cream with the hand crank and I told him I had too! Long time ago, in school I think!     I have a big fancy restaurant gelato maker left over from selling my coffee shop. This reminds me I need to put that to use since I have it (even though this is a no churn ice cream recipe) I love how this has mint chips!

    This sounds delicious! I have made no churn ice cream once but I’ve never thought of making it again; I’m not sure why we all enjoyed it a lot and it so nice and simple. Pinning to try.
