Mocha Cookie Crunch Fudge

Easy microwave fudge, using less than five ingredients and all made in the microwave!  I used espresso baking chips and crushed up Oreo Latte Thin cookies to give this fudge a mocha flavor that was rich in chocolate and coffee flavor.  When you are in need of a quick and easy dessert recipe, microwave fudge is the answer.

Besides blogging I also do custom dessert orders.  Anything from a dozen cookies to loaf cake to the usual birthday cakes and cupcakes…if you message me with a request, I will have a hard time saying no.  I love to bake!!  And I also am a sucker for helping out at dessert auctions that are for charities by donating a basket full of goodies to be auctioned off.  And that’s where this fudge went.  Into a basket (filled with two jars of edible cookie dough, a batch of my Cinnamon Sugar Blondies and a signed copy of my cookbook).

And that basket got…..$575!!!  How awesome is that?!  The money went to my local firefighters widows and children fund.  Gotta support my guys!!

So let’s make some $575 fudge, shall we? Hehehe…

Mocha Cookie Crunch Fudge

Serves: 30 Cooking Time: 1-2 minutes

Ingredients

  • 1 cup espresso baking chips
  • 1 cup semi-sweet chocolate chips (or milk chocolate chips for a sweeter fudge)
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 teaspoon vanilla extract (I used Rodelle Pure Vanilla Extract)
  • 1/2 teaspoon salt
  • 1-1/2 cups Oreo cookie pieces (I used the Oreo Latte Thins), divided

Instructions

Line an 8x8-inch baking pan with foil and pray the bottom with baking spray. Set aside.

In a large bowl, add the espresso chips, chocolate chips and entire can of sweetened condensed milk. Place the bowl in the microwave and heat for 1-2 minutes, stopping every 30-seconds to stir the mixture. Once the chips have completely melted, remove the bowl from the microwave and stir in the vanilla extract, salt and 1 cup of the Oreo pieces.

Pour fudge into prepared pan and top with the remaining Oreo pieces, gently pressing the pieces into the fudge. Let fudge set for 2-3 hours before cutting into desired sized squares.

Notes

Fudge can be stored at room temperature or in the refrigerator depending on how you enjoy your fudge. Store in an airtight container. Fudge will stay fresh for one week.
