Peanut Butter Cream Cheese Cookies

Peanut butter cookies made super soft with the addition of cream cheese in the cookie dough!  These cookies bake up soft and fluffy and are perfect for adding any kind of chocolate chip or candy pieces.

This cookie dough needs to chill before baking, but you also have the option of freezing this cookie dough and baking the cookies later.  To freeze the cookie dough, wrap the dough tightly in plastic wrap and stow it in a freezer proof ziplock bag.  I froze the dough for almost two months before baking into cookies.  When ready to bake the cookies, just remove the dough from the freezer and let it thaw overnight in the refrigerator.

Ingredients

  • 1/4 cup unsalted butter, room temperature
  • 4-ounces cream cheese, room temperature
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
  • 1 cup creamy peanut butter
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar, firmly packed
  • 1-1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter candies

Instructions

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and cream cheese. Mix on medium speed until smooth and creamy. Add the egg, vanilla extract and peanut butter and mix on medium-high speed until fully incorporated. Scrape down the sides of the bowl and add the white sugar and brown sugar. Mix until combined.

Change the mixer to low speed and add the flour, baking soda, baking powder, salt and cornstarch. Mix until barely combined. Remove the bowl from the mixer and fold in the chocolate chips and candies. Dump dough onto a long piece of plastic wrap, cover the dough and refrigerate over night.

Once the dough has chilled, preheat oven to 350-degrees and line large cookie sheets with parchment paper or a silpat. Use a standard sized cookie scoop to scoop cookie dough balls onto the prepared cookie sheets.

Bake in 350-degree oven for 12-15 minutes.

Notes

Store cookies in an airtight container at room temperature.
