S’mores Chocolate Chip Cookies

A simple, one bowl chocolate chip cookie recipe, with the addition of toasted marshmallow flavoring, graham cracker pieces and milk chocolate and semi-sweet chocolate chips.  All the flavors of a s’more, but in a chocolate chip cookie!

To get the ULTIMATE marshmallow flavor, I used the Toasted Marshmallow Flavoring from Amoretti.  It gives the cookies that marshmallow flavor without adding actual marshmallows.  Because if you have ever baked cookies with marshmallows, then you know that they basically melt and disappear while they are baking.  So I solved that problem by using this yummy flavoring!

And if you do not have this flavoring, and want to make these cookies, I included instructions in the notes section under the recipe on how to add marshmallow to these cookies!

This cookie dough smells SO GOOD….

Another bonus to this cookie recipe is that no chilling is required.  One bowl and then into the oven to bake!

S'mores Chocolate Chip Cookies

Serves: 18 Cooking Time: 11-12 minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup light brown sugar
  • 1/4 cup white sugar
  • 1 tablespoon Amoretti Toasted Marshmallow Flavoring (or 2 teaspoons vanilla extract)
  • 2 egg yolks
  • 1 cup all-purpose flour
  • 1/3 cup fine graham cracker crumbs
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons cornstarch
  • 4 graham cracker sheets, broken into pieces
  • 1 cup chocolate chips (I used a mix milk chocolate and semi-sweet chocolate chips)

Instructions

Line two large cookie sheets with parchment paper and set aside.

In a large bowl mix together the butter, brown sugar, white sugar and marshmallow flavoring (or vanilla extract). Mix until combined. Stir in the egg yolks. Stir in the flour, baking soda, salt and cornstarch and mix until just combined. Fold in the graham cracker pieces and chocolate chips.

Use a standard sized cookie scoop to scoop cookie dough balls onto prepared cookie sheet. Leave a few inches between the dough balls. Chill cookie dough balls in the refrigerator for at least one hour before baking. Once the cookie dough has chilled, preheat oven to 350-degrees and bake cookies in 350-degree oven for 9-12 minutes, depending on your desired cookie doneness.

Let cookies set on cookie sheet for 5-minutes before transferring to a wire rack to cool completely.

Notes

If you do not have marshmallow flavoring, you can add a large marshmallow to the top of each cookie and place under the broiler on high heat for 10-30 seconds (or until desired meltiness).
