The BEST Healthy Oatmeal Cookies

The best healthy oatmeal cookies.  No applesauce or bananas were involved in the process of making these cookies.  NOPE.  You won’t find any fruit in these cookies!  Because when I want cookies, I want cookies.  And when I want fruit, well….I just want just plain fruit.  These cookies are my favorite, small batch oatmeal cookies that are semi-guilt free and without any weird ingredients!

Oatmeal cookies are my jam and I am always on a mission to come up with a cookie that tastes as good as a regular ol’ oatmeal cookie, but without all the added sugar and fat.  So these cookies I am sharing today are my answer to that.  And no…there’s no butter or fat in these cookies.  And yes…they bake up just fine!

I also used THIS oat flour in these cookies.  You can also use all-purpose or whole wheat flour instead.  Or maybe you want to make your own oat flour??  Just throw some whole oats into a food processor and process until you get flour consistency!

The BEST Healthy Oatmeal Cookies

Serves: 5 Cooking Time: 5-minutes

Ingredients

  • 2 tablespoons brown sugar
  • 3 tablespoons Swerve granular sugar
  • 1/4 cup egg substitute
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • pinch of nutmeg
  • pinch of salt
  • 1-1/2 teaspoons cinnamon
  • 1 heaping cup quick cooking oats
  • 4 tablespoons oat flour (can use all-purpose flour)
  • 1/4 teaspoon baking soda

Instructions

Preheat oven to 350-degrees. Line a cookie sheet with parchment paper and set aside.

In a medium sized bowl add all of the ingredients and stir until combined. Drop medium-sized cookie dough balls onto prepared cookie sheet. Dough will be a little loose, so use your hands to firmly shape into balls. Bake in 350-degree oven for 5-minutes.

Remove baked cookies from oven and let set on cookie sheet for several minutes before transferring to a wire rack to cool completely.

Notes

Cookies do not spread during baking. Option to press down on the cookie dough before baking to get more of a flat cookie shape.
