Cake Mix Cookies

Easy Cake Mix Cookies, made using just four ingredients!  While I don’t normally have cake mix on hand in my kitchen, I did have some leftover Funfetti cake mix after making my Birthday Cake No Bake Cookies.  And if you know me, you know I never let anything go to waste.  So I made cookies with the leftover dry cake mix!  And they are sooooo good.  Embarrassingly good, because they are so easy to make!

If you don’t bake, then this recipe is perfect for you.  It is super easy and does not require any special tools or appliances.  Just four ingredients, a bowl, a spoon and an oven!  The recipe I am sharing uses an entire box of cake mix, but at the end I will also tell you how to make these with leftover cake mix.  And I know cake mixes vary in their weight depending on the brand, but it is minimal enough that this recipe will work with any brand of standard size cake mix.

Use whatever flavor cake mix you want too.  I used Funfetti cake mix and then rolled the cookie dough balls in sprinkles before baking.  The cake mix cookie flavor options are endless, as are what you can roll the cookies in.  It just depends on what flavor cake mix you choose.

Serves: 15-20 Cooking Time: 8-minutes


  • Standard size box of cake mix, any flavor
  • 1/2 cup canola oil
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla extract



Preheat oven to 350-degrees. Line a baking sheet with parchment paper and set aside.


In a medium sized mixing bowl, add the entire package of dry cake mix. Stir in the canola oil, eggs and vanilla extract into the cake mix. Stir until combined.


Use a cookie scoop to scoop medium sized cookie dough balls. Option to roll cookies in sprinkles, cinnamon and sugar, coconut flakes, chopped nuts, etc before placing dough balls on prepared cookie sheet.


Gently press the balls down as they do not spread when baked. Bake cookies in 350-degree oven for 8-minutes. Remove cookies from oven and transfer to a wire rack to cool completely.


Store cookies in an airtight container at room temperature. Cookies stay fresh for several days.

So what if you have less than a full box of dry cake mix?  You can still make these cookies!  I had a box of Funfetti cake mix that I had only used 2/3 cup of cake mix from, after making two batches of my Birthday Cake No Bake Cookies.  So, I emptied the remaining amount of dry mix in the bowl, added 1/4 cup canola oil, 1 egg and 1 teaspoon vanilla extract.  If you are using leftover cake mix to make these cookies, you may need to adjust the above amounts.  I added the oil in increments until I reached my desired consistency.  If the mixture looks too dry, add water a teaspoon at a time until you reach a cookie dough consistency (not sticky!).

Have you ever had a cake mix cookie before?  They are yummy!  You get that classic box-mix cake taste but in cookie form!  I decided to keep all the cookies for myself (except for the few I shared with James and Ethan and the Davis Family).  Nom nom nom.
