Banana Bread Muffins with Streusel

Four overripe bananas chilling in the freezer, just waiting to be made into a yummy banana treat.  I have made a couple different banana bread recipes here on the blog, but not a banana muffin!  With streusel!!  This recipe is an easy, one-bowl recipe (well two bowls if you count the bowl you mix the streusel up in), that will yield piping hot muffins, ready to eat in less than an hour, from start to finish.

So who’s with me??  Who wants banana bread muffins for breakfast?  And is it just me, or whenever I hear “banana bread” I instantly think of mom.  Banana bread was a treat my mom used to make every so often when we were kids.  I think banana bread is a special recipe because you need those overripe bananas to make it, so it’s not something you can just walk into the kitchen and whip up.  It takes some planning and forethought.

But to help with that, I have a secret!!  And because I love you, of course I am going to share it with you!  Here’s my secret: I have a ziplock bag in my freezer that gets the lonely few overly ripe bananas that cross my path.  Once I have enough in the freezer, it’s time for banana yumminess!

Now fill those muffin cups!

I use a cookie scoop to fill my muffin cups…I find it the easiest (and least messy) way!

Top with a generous amount of streusel and these muffins are ready for the oven.  And can we talk about the smell of banana bread baking in the oven here for a sec?!  OMG!  My house smelled amazing while these muffins were baking, and while they cooled on the counter!!

Banana Bread Muffins with Streusel

Serves: 16 Cooking Time: 14-16 minutes

Ingredients

  • BANANA BREAD:
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 4 overripe bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Bakers Vanilla Extract)
  • 1/4 teaspoon ground nutmeg
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • pinch of salt
  • STREUSEL:
  • 2 tablespoons butter, cold and cut into chunks
  • 4 tablespoons all-purpose flour
  • 2/3 cup light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

Instructions

Preheat oven to 400-degrees. Line two cupcake tins with 16 cupcake liners and set aside.

PREPARE BANANA BREAD: In a large bowl, mash the bananas with a fork. Add the butter, sugar, egg, vanilla extract and nutmeg to the mashed bananas and mix until incorporated. Stir in the flour, baking soda, baking powder and salt until just combined. Do not over mix.

PREPARE STREUSEL: In a small bowl, use two forks or a pastry blender to mix together the cold butter, flour, brown sugar, cinnamon and melted butter until the mixture turns into little crumbles.

Fill cupcake liners 2/3 full of banana bread batter and top generously with streusel. Place muffins in the oven and bake for 5-minutes at 400-degrees. After 5-minutes, immediately turn the oven down to 350-degrees and continue to bake muffins for 10-minutes, or until a toothpick inserted in the middle comes back without raw batter on it.

Remove baked muffins from the oven and let set in the cupcake tin for several minutes before transferring to a wire rack to finish cooling completely.

These muffins were nice and moist and light in texture….no shortage of banana flavor in these!

    I have many many bananas in my freezer that I never seem to get to. These muffins totally inspire me to use those babies and you can never go wrong with some streusel:)

    I do the same with my bananas in the freezer. Can you ever have to many recipes to use them up? No I think not! And can we talk about the streusel, that is my favorite part!

    I love the idea of banana muffins, but I do have to admit that when I saw streusel that is when I couldn’t resist. Your pictures are so pretty and the muffins look delicious. Isn’t it funny how certain foods remind us of different people?
