Chewy Maple Granola Bars

Chewy, no bake maple flavored granola bars….a copycat recipe of the Quaker chewy granola bars, but with the yummy flavor of maple!  These granola bars will appeal to kids and adults, alike and only take minutes to make.

For even more maple flavor (and a good crunch), I added My Favorite Indulgence Maple Cinnamon Granola.  If you do not have a bag of granola on hand, but want to make these, just substitute the granola for an additional 1/2 cup of quick cooking oats and an additional 1/2 cup of the crispy rice cereal.

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons maple extract
  • 1/4 teaspoon salt
  • 1-1/2 cups crispy rice cereal
  • 1/2 cup quick cooking oats
  • 1 cup granola, finely crushed (I used My Favorite Indulgence Maple Cinnamon Granola)

Instructions

Line a 9x9-inch square baking dish with foil or parchment paper, and spray the bottom and sides with baking spray. Set aside.

In a microwave-safe bowl, add the peanut butter and honey. Microwave for 1-minute. Remove the bowl from the microwave and stir in the brown sugar, vanilla extract and salt until the mixture is smooth.

Stir in the crispy rice cereal, granola and oats. Stir until all ingredients are incorporated. Pour mixture into an even layer in the prepared pan.

Refrigerate the granola bars for at least 2-hours before cutting into desired sized bars or squares.

Notes

Store granola bars in an airtight container in the refrigerator for a firmer bar, or for a softer texture, store at room temperature. See the blog post for substitutions if not adding granola to your granola bars;.

These are so good, I have made them four times already!
