Chocolate Peanut Butter Balls (Buckeyes)

Chocolate Peanut Butter Balls, also known as Buckeyes, are littles balls of peanut butter coated in chocolate.  It’s basically like a peanut butter cup, but in ball form!  And if you are from Ohio, then you know these balls as Buckeyes.  These balls are easy to make, no bake and EVERYONE loves these!

My second husband was born and raised in Ohio, and the first time I went back to Cincinnati with him to meet his family, I saw these “buckeye” candies being sold everywhere!!  The buckeye is the state tree of Ohio and the buckeye nuts are a product of the tree.  College football is also HUGE in Ohio and the Ohio State mascot is the buckeye nut.  So I guess they made a candy to look like the buckeye nut….and why not?  How can the combination of peanut butter and chocolate ever be bad??

So after begging for the “family” recipe from my (now) ex-husbands family, his mother and sister sent me their recipe that they had been making for years.  And so then became the tradition of me making buckeyes every year during the holidays!!

You can tell by the photocopy of my handwritten recipe card, that I have made this recipe many times (and obviously am very messy and spill vanilla extract a lot when I make these)…

The glory about these balls is that there are just a few ingredients needed!

So the only downfall to making these is that you have to scoop a ton of balls and then coat them in chocolate…it can be kind of time consuming.  But then this also is a great opportunity to get the kids involved in helping to roll these into balls!

I used a super small cookie scoop to scoop my balls…

And I actually timed it to see how long it took me to scoop all the balls and it only took me 15-minutes to scoop all 70 balls.  So maybe I am exaggerating at how annoying it is to scoop all the balls!

Pop that tray of goodness in the refrigerator for an hour to chill, and then coat in chocolate!

Chocolate Peanut Butter Balls

Serves: 70 Balls Cooking Time: 0-minutes

Ingredients

  • 1-1/2 cups creamy peanut butter
  • 1 cup unsalted butter, room temperature
  • 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
  • 6 cups powdered sugar
  • 4 cups chocolate chips (I used Chocoley Candy and Molding Chocolate)

Instructions

In the bowl of a stand mixer, affixed with the paddle attachment, cream together the peanut butter and butter until smooth and creamy. Add the vanilla extract. Add the powdered sugar to the mixer, one cup at a time.

Place a silpat, piece of foil or parchment paper on a cookie sheet. Scoop small balls and place on the cookie sheet. Place cookie sheet in the refrigerator to allow the peanut butter balls to chill for at least an hour.

Once the peanut butter balls have chilled, add one cup of chocolate to a small bowl and microwave for 60-90 seconds, stopping every 15-seconds to stir. Remove the bowl once all the chocolate is melted and use a toothpick to dip the peanut butter balls into the melted chocolate or place a ball on a fork and dunk in the chocolate. Place chocolate coated ball back on the cookie sheet to set. Continue the process with all the peanut butter balls and melt the remaining chocolate one cup at a time, as needed.

Once the chocolate has set on the peanut butter balls, store in an airtight container in the refrigerator.

Notes

Peanut butter balls stay fresh for 1-2 weeks.

You can use chocolate chips to coat the balls in.  I used Chocoley Bada Bing Bada Boom candy and molding milk chocolate.  Their chocolate melts perfectly in the microwave and is super easy to work with when rolling the balls in their chocolate.

So if you want to make you peanut butter balls into Buckeyes, then stick a toothpick into the top of one of the balls and dip the ball halfway in the melted chocolate:

And now you have a Buckeye!!

I just like to roll my balls completely in chocolate….

You can even add sprinkles on top if you want to make them pretty!!  Just make sure you have those sprinkles ready, because the chocolate sets quickly once you roll the peanut butter balls in the melted chocolate.

Creamy peanut butter center, coated in a thin layer of chocolate!  Seriously AMAZE-balls….Yes.  I did just say that!!
