Cinnamon flavored Cap’n Crunch, marshmallows, more cinnamon and a generous topping of cinnamon-sugar make these treats worthy of being called a churro!
I found some cinnamon flavored Cap’n Crunch cereal at my local store and thought that would make a fun churro cereal treat! This was limited edition, so you can just use regular Cap’n Crunch and add an additional teaspoon of cinnamon to the marshmallow mixture.

Churro Cereal Treats

- 1/2 cup unsalted butter
- 1 (16-ounce bag) mini marshmallows, divided
- 1/3 cup white chocolate chips
- 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
- 1/2 teaspoon salt
- 1-2 teaspoons ground cinnamon (depending on how much cinnamon flavor you like)
- 6-7 cups Cinnamon Cap'n Crunch Cereal (or regular Cap’n Crunch with an added teaspoon of cinnamon)
- TOPPING:
- 1 tablespoon sugar
- 1 teaspoon cinnamon
Instructions
Line a 9x13-inch pan with foil and spray the oil bottom and sides with baking spray and set aside. In a large pot, on the stovetop over medium heat, melt the butter. Once the butter has melted, add the marshmallows, reserving 1/2 cup of marshmallows for later. Stir the mixture until the marshmallows are completely melted. Remove from the stove.
Immediately stir in the white chocolate chips, vanilla extract, cinnamon and salt. Stir until the white chocolate chips are mostly melted and the ingredients are combined. Stir in the Cap'n Crunch cereal one cup at a time. Add only as much cereal so that they are still gooey, but not so much that the cereal is dry and not fully coated. Fold in the remaining 1/2 cup of mini marshmallows.
Pour the mixture into the pan and spread gently into an even layer. Combine the cinnamon sugar topping in a small bowl and immediately sprinkle over the top of the treats.
Allow treats to set and cool in the pan before cutting into squares.
Notes
Store in an airtight container at room temperature. Treats stay fresh for 3-4 days.
