Cinnamon Roll No Bake Cookies

Cinnamon Roll flavored instant oatmeal packets are the base of these no bake cookies!  Simple no bake cookies, with all the flavors of a cinnamon roll, but in cookie form.  

I was looking for a way to use up an extra box of instant oatmeal sitting in my pantry, and thought the idea of Cinnamon Roll No Bake Cookies sounded like a yummy idea!

Cinnamon Roll No Bake Cookies

Serves: 15 Cooking Time: 4-minutes

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch of ground nutmeg
  • pinch of salt
  • 1/3 cup white chocolate chips
  • 2-1/2 to 3 cups 100-calorie Cinnamon Roll Instant Oatmeal Packets (approximately 8 oatmeal packets)

Instructions

Place a Silpat or long sheet of foil on the counter to drop your cookies on. In a medium-sized pot, on the stovetop over medium-high heat, add the butter, sugars and milk. Stir occasionally until mixture reaches a boil. As soon as the mixture comes to a boil, set the timer for one-minute and stir the mixture constantly. After one minute remove the pot from the stove.

Stir in the vanilla extract, cinnamon, nutmeg, salt, white chocolate chips and instant oatmeal into the pot. Add enough of the instant flavored oatmeal to reach a semi-firm consistency. You don’t want the mixture to be dry or liquidy.

Once combined, use a medium sized cookie scoop to drop cookies onto Silpat or foil. Cookies set quickly.

Notes

Store cookies in an airtight container at room temperature.

    I have tried making this recipe twice and it didn’t turn out either time. I looked up another classic no-Bake cookie recipe and I think your sugars are off. A regular recipe calls for 2 cups of sugar to 1/2 c butter and 1/2 c milk. Yours ends up being 1/2:1/2:1/2. I could be wrong but they definitely don’t turn out.

      Are you using the 100-calorie oatmeal packets that have sugar in them? That’s why there isn’t as much sugar in these cookies.
