Cocoa Krispies Marshmallow Treats

Malt-O-Meal makes a cereal that combines Cocoa Krispies with the marshmallows from Lucky Charms, to make an epic breakfast cereal: Cocoa Dyno-Bites with marshmallows.  Every moms dream for their kids to eat for breakfast, right?!  Well instead of eating a bowl of this for breakfast, I turned it into one of my epic marshmallow cereal treats!

Malt-O-Meal cereal is the bagged cereal you find by the other cereal.  I love their cereal because they all come in resealable bags!!  Why do the other cereals still come in the box?!  Well the Cocoa Dyno-Bites with marshmallows is Ethan’s new favorite cereal.  The boy plays three sports, so I am not all that worried about making sure his breakfast is ummm healthy.  We balance it out come lunch and dinner!  But for his birthday, Ethan wanted me to make cereal treats out of his cereal so he could share them with his friends.

If you can’t find this cereal, you can always just use good ol’ Cocoa Krispies.  And if you really want the Lucky Charms marshmallows in your treats, then buy some Lucky Charms and pilfer all of the marshmallows out of it.  Can’t say I never did that growing up!  But then I was left with basic oat cereal and my mom still made me eat it.  So…yeah.

Cocoa Krispies Marshmallow Treats

Serves: 30 Cooking Time: 2-5 minutes

Ingredients

  • 1/2 cup unsalted butter
  • 1 (16-ounce) bag mini marshmallows, divided
  • pinch of salt
  • 1 teaspoon vanilla extract (I used Rodelle Gourmet Vanilla Extract)
  • 1/3 cup semi-sweet chocolate chips
  • 6 cups Cocoa Dyno-Bites with Marshmallows (or Cocoa Krispies)
  • Optional sprinkles for topping

Instructions

1

Line a 9x13-inch baking pan with foil and spray with cooking spray. Set aside.

2

In a large pot on the stovetop, add butter and melt over medium-high heat, stirring occasionally. Once the butter is melted add the marshmallows to the pot, reserving approximately 1/2 cup of marshmallows in the bag. Stir butter and marshmallows constantly until all the marshmallows have melted. Once the marshmallows have completely melted and incorporated into the butter, remove the pot from stove and stir in the salt, vanilla extract and chocolate chips. Stir until combined and the chocolate chips have mostly melted.

3

Gently stir in the Cocoa-Dyno Bites with Marshmallows cereal into the marshmallow mixture one cup at a time, adding the reserved 1/2 cup of marshmallows at the end. Stir until the cereal is thoroughly incorporated in the marshmallow mixture. Pour mixture out into prepared pan and gently press mixture into pan. Top with colorful sprinkles (if desired), pressing gently onto the tops of the treats.

4

Let the treats cool in the pan and set before slicing into desired sized squares.

Notes

Store at room temperature in an airtight container.

XOXO,

Kelly

How have I never heard of these? I’m all about cereal for afternoon snacks so I need to pick up a bag. (Or two because I’ll need one to make these bars. YUM!)
