Crockpot Shredded Buffalo Chicken

All the tastes of buffalo wings, but in the form of crockpot shredded chicken.  This easy recipe requires only a few ingredients, all of which get tossed together in the crockpot and then cooked for a few hours on high.  Perfect for a quick and easy dinner, or for a fun appetizer to serve while watching those football games!

To make this shredded chicken taste like buffalo wings, I used Sweet Baby Ray’s Mild Buffalo Wing Sauce.  You can use any brand of wing sauce you can find though!

Crockpot Shredded Buffalo Chicken

Serves: 8 Cooking Time: 4-1/2 hours

Ingredients

  • 1-1/2 to 2 lbs. boneless, skinless chicken breasts (approximately 6 average-sized breasts)
  • 1 teaspoon barbecue seasoning (I used Pappy's Original)
  • 1 teaspoon liquid smoke
  • 1 (8-ounce) block cream cheese, cut into chunks
  • 1/4 cup Sweet Baby Ray's Buffalo Wing Sauce

Instructions

Spray the inside of a 7-quart Crockpot with baking spray and set aside.

Remove any excess fat from the chicken breast and butterfly them so they cook evenly. Add the chicken breasts to the inside of the Crockpot and sprinkle with barbecue seasoning. Sprinkle the liquid smoke and chunks of cream cheese over the chicken breasts. Pour the buffalo sauce over the chicken. Put the lid on the Crockpot.

Cook on high for 4-hours or until the chicken shreds when poked with a fork. Use two forks to shred the chicken and stir the chicken in the sauce that is in the Crockpot. Put the lid back on the chicken and allow to cook for an additional 30-minutes on high to allow the shredded chicken to soak in all the sauce.

Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator. Leftovers can be re-heated in the microwave for 1-minute before serving.

You can serve this up on sandwich rolls or buns, or for appetizers make mini sliders using Hawaiian rolls or make nachos and top flour tortilla chips with the shredded chicken, cheese, refried beans and jalapeños.
