Easter Rice Krispie Treats

A quick and easy rice krispie treat recipe, made just for Easter by adding Easter candies, bright sprinkles and pieces of Oreo cookies (bonus points if you use the special Spring variety of Oreo cookies).

I used Cadbury Mini Eggs in these rice krispie treats, but you can use any candy covered chocolate Easter candy that you want!

Serves: 36 Cooking Time: 2-3 minutes

Ingredients

  • 1/2 cup unsalted butter
  • 8 cups (one 16-ounce bag) mini marshmallows, divided
  • 1/3 cup white chocolate chips
  • 1 teaspoon vanilla extract (I used Rodelle Pure Vanilla Extract)
  • 1/2 teaspoon salt
  • 8 cups Rice Krispies cereal
  • 10-12 Oreo cookies, broken into pieces
  • 1/2 cup chocolate Easter candies (I used Cadbury Mini Eggs, cut into pieces)
  • 1 tablespoon sprinkles

Instructions

1

Line a 9x13-inch baking pan with foil. Spray the sides and bottom of the pan with baking spray and set aside.

2

In a medium-large pot, on the stovetop, add the butter to the pot. Melt the butter over medium-high heat. Once the butter is melted, add seven cups of mini marshmallows to the melted butter. Melt the marshmallows into the butter completely, stirring constantly. Once the marshmallows are completely melted, add the white chocolate and stir for one minute. Remove the pot from the stove and turn the stove off.

3

Immediately add the vanilla extract and salt to the melted marshmallows and stir. Stir in the Rice Krispies into the marshmallow mixture, one cup at a time, fully mixing in each cup of cereal before adding the next. At the fourth cup of cereal, add the remaining cup of mini marshmallows, and stir into the mixture until combined. Add the remaining cups of cereal. Fold in the Oreo cookie pieces and Easter candies.

4

Pour mixture out into prepared pan. Spray one hand with baking spray to gently push the marshmallow treats so there is an even layer in the pan. Do not push hard on the treats or you will get tough treats. Add the sprinkles on top.

5

Allow treats to set and cool in the pan completely before cutting into desired sized squares.

Notes

Store treats in an airtight container at room temperature. Treats stay fresh for several days.
