Dry funfetti cake mix and an abundance of sprinkles are added to your classic rice krispies treat, to make treats that have a sweet vanilla flavor and are full of rainbow fun.

Funfetti Rice Krispies Treats

Print Recipe
Serves: 30 Cooking Time: 0-minutes

Ingredients

  • 1/2 cup unsalted butter
  • 8 cups (one 16-ounce bag) mini marshmallows, divided
  • 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
  • pinch of salt
  • 1/3 cup white chocolate chips
  • 1 cup dry funfetti cake mix
  • 1/3 cup sprinkles
  • 6 cups Rice Krispies cereal

Instructions

1

Line a 9x13-inch baking pan with foil. Spray the sides and bottom of the pan with baking spray and set aside.

2

In a medium-large pot, on the stovetop, add the butter to the pot. Melt the butter over medium-high heat. Once the butter is melted, add six cups of mini marshmallows to the melted butter. Melt the marshmallows into the butter completely, stirring constantly. Once the marshmallows are completely melted, remove the pot from the stove and turn the stove off.

3

Immediately add the vanilla extract, salt, white chocolate and dry funfetti cake mix to the melted marshmallows and stir until well incorporated. Stir in the Rice Krispies into the marshmallow mixture, one cup at a time, fully mixing in each cup of cereal before adding the next. At the fourth cup of cereal, stir in one cup of mini marshmallows and the sprinkles to the mixture. Add the remaining two cups of cereal. Add the rest of the mini marshmallows to the treats and stir until incorporated (you want them to stay mostly whole).

4

Pour marshmallow treats out into prepared pan. Spray one hand with baking spray to gently push the marshmallow treats so there is an even layer in the pan. Do not push hard on the treats or you will get tough treats. Option to add additional sprinkles on top!

5

Wait until treats have cooled and set before cutting into desired sized squares.
