Green Velvet Cookies

Green Velvet Cookies, made from scratch without a cake mix (!!!), with cocoa powder and chocolate extract for the perfect chocolate flavor.  Dye the dough with green food gel and add some white chocolate chips, and you have a fun St. Patrick’s Day cookie that’s sure to take people by surprise!  Because everyone knows what red velvet cookies are….but green velvet?!

I used Rodelle Gourmet Baking Cocoa and Rodelle Chocolate Extract in my green velvet cookies, which gave these cookies the PERFECT chocolate flavor.  And anytime you are making a red velvet or green velvet cookie or dessert that’s from scratch, I recommend using a gel food dye to color the cookies rather than a liquid dye.

Just a few white chocolate chips are added for extra sweetness.  I even rolled a few cookies in sugar because….why not?!

Green Velvet Cookies

Serves: 24 Cooking Time: 10-11 minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup white granulated sugar
  • 3/4 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1 tablespoon milk (I used unsweetened vanilla almond milk)
  • 2 teaspoons Rodelle Chocolate Extract (or vanilla extract)
  • 3-4 teaspoons green gel food dye
  • 1-1/2 cups + 1 tablespoon all-purpose flour
  • 1/4 cup Rodelle Gourmet Baking Cocoa
  • 1 teaspoon baking soda
  • 1-1/2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips

***DOUGH REQUIRES AT LEAST ONE HOUR OF CHILLING BEFORE BAKING***

In the bowl of your stand mixer, affixed with the paddle attachment, cream together the butter and white and brown sugars. Once fluffy, mix in the egg, milk, chocolate extract and food dye. Add the gel dye in drops until desired color is reached. Scrape down the sides of the bowl and mix on medium-high speed until all ingredients are thoroughly combined.

Change mixer to low speed and add the flour, cocoa powder, baking soda, cornstarch and salt. Mix until barely combined. Remove the bowl from the mixer and fold in the chocolate chips. Refrigerate dough for at least one hour (I refrigerated mine overnight).

After dough has chilled for at least one hour, preheat oven to 350-degrees. Line two cookie sheets with parchment paper and use a standard sized cookie scoop to drop cookie dough balls a few inches apart on prepared cookie sheet. If rolling in sugar before baking, then drop your dough balls in a bowl of sugar and roll them around first, before placing on cookie sheet. Bake cookies in 350-degree oven for 10-11 minutes.

Let cookies set on the cookie sheet for 5-10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature. Cookies stay fresh for up to a week.

The Green Velvet Cookies rolled in sugar had a crackly top and sugary crunch….

If you want a brighter green color, and glossy finish, then skip rolling them in sugar…..

And that velvety, chocolatey interior….

    This reminds me of when I was a kid and could eat ALL THE THINGS – I would ONLY eat mint chocolate chip ice cream if it were GREEN! hahahah! But green vegetables – GET THOSE THINGS OUTTA MY FACE!!!

      Well it just wouldn’t be mint chocolate chip ice cream unless it was GREEN!!! Funny….we are so much alike. I used to stop by the store on my way home from school and buy a pint of mint chip ice cream and then go home to gorge on it. Hahaha. and now I can’t have dairy. UGHHH!
