Chocolate Hot Cocoa Cookies

Chocolate cookies flavored with dry hot cocoa mix in the cookie dough batter, to give these cookies the distinct taste of hot cocoa.  And with marshmallows added on top of course!  These cookies are like a cup of hot cocoa, but in cookie form!

I did not add any marshmallows to my cookie dough.  Why?  Well because they would just melt and disappear when baking.  Instead, I added the mini marshmallows on top of the cookies after they were done baking and then put my cookies back in the oven for 1-minute to soften the marshmallows up.  Mmmmmm….

If you can find the dehydrated mallow bits, those will work in the cookie dough though!

Chocolate Hot Cocoa Cookies

Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 3/4 cup white sugar
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
  • 3-1/4 cups all-purpose flour
  • 3/4 cup hot cocoa mix (I used Rodelle Hot Cocoa Mix)
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cornstarch
  • 1 cup chocolate chips (I used mini chocolate chips)
  • TOPPING:
  • 1 cup mini marshmallows

****THIS DOUGH REQUIRES 30-MINUTES OF CHILLING BEFORE BAKING****

In the bowl of a stand mixer, affixed with the paddle attachment, cream together the butter and brown and white sugars on medium-high speed. Scrape down the sides of the bowl. Add the eggs one at a time into the mixer, mixing the eggs completely into the batter before adding the second egg. Add the vanilla extract. Mix until combined.

Change the mixer to low speed and add the flour, hot cocoa mix, salt, baking soda, baking powder and cornstarch. Mix until just combined. Remove the bowl from the stand and fold in the chocolate chips. Chill dough for at least 30-minutes in the refrigerator.

After dough has chilled for 30-minutes, preheat the oven to 350-degrees and line two cookie sheets with parchment paper. Drop medium sized cookie dough balls on prepared sheet and bake for 11-minutes. Remove cookies from the oven and press several mini marshmallows onto the tops of the cookies. Return cookies back into the oven for 1-2 minutes to soften the marshmallows. Remove cookies and let set on cookie sheet for 5-minutes before transferring to a wire rack to cool completely.

Notes

Cookies stay fresh for several days if stored in an airtight container at room temperature.
