Maple Cinnamon Cereal Treats

Maple extract is used to flavor these Rice Chex marshmallow treats and then topped with a cinnamon-sugar mixture.  It tastes like a cross between French Toast and cinnamon-sugar toast!  An easy, no bake cereal treat.

Maple Cinnamon Cereal Treats

Ingredients

  • 1/2 cup unsalted butter
  • 1 (16-ounce bag) mini marshmallows, divided
  • 1/3 cup white chocolate chips
  • 3 teaspoons maple extract
  • 1/2 teaspoon salt
  • 8 cups Rice Chex cereal
  • CINNAMON SUGAR TOPPING:
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cinnamon

Line a 9x13-inch pan with foil and spray the bottom and sides with baking spray and set aside. In a large pot, on the stovetop over medium heat, melt the butter. Once the butter has melted, add the marshmallows, reserving 1/2 cup of marshmallows for later. Stir the mixture until the marshmallows are completely melted. Remove from the stove.

Immediately stir in the white chocolate, maple extract and salt. Stir until the white chocolate is mostly melted and the ingredients are combined. Stir in the Rice Chex cereal one cup at a time. Fold in the 1/2 cup of mini marshmallows.

Pour the mixture into the pan and press into an even layer. In a small bowl mix together the cinnamon sugar topping and then sprinkle evenly over the cereal treats.

Allow treats to set and cool in the pan before cutting into squares.

Notes

Store treats at room temperature in an airtight container. Treats stay fresh for several days.
