Peanut Butter Blondies

These peanut butter blondies are like the softest peanut butter cookie, but in bar form. And these are super easy to make because you just put all the dough in the pan and bake. No having to scoop individual cookies. Plus they make enough to feed a small crowd.

Use creamy or chunky peanut butter and add in chocolate chips, pieces of candy or cookies, or even broken up bits of Reese’s Puffs treat bars (I had a whole box just sitting in my pantry and I thought they would go well in my blondies. Or you can just leave them plain! Make them however you like them.

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup regular peanut butter (chunky or creamy)
  • 2 cups light brown sugar, firmly packed
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla Extract)
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • Optional: 1 cup of cookie pieces, candy, etc. I used three Puff’s bars, broken into pieces and then one additional bar broken into pieces and added on top

Instructions

Preheat oven to 350-degrees and line a 9x13-inch pan with foil or parchment paper. Spray the bottom and sides with baking spray. Set aside.

In the bowl of an electric mixer, mix together the butter, peanut butter and brown sugar until light and creamy. Add the eggs, one at a time into the mixture. Scrape down the sides of the bowl. Add the vanilla extract. Mix on medium speed until combined.

Change the mixer to low speed and add the salt and flour. Mix until barely combined. Remove the bowl from the mixer and add your desired add-in's (optional). Used a rubber scraper to ensure mixture is fully mixed.

Pour batter into prepared pan in an even layer. Bake in 350-degree oven for 20-23 minutes, or until a toothpick inserted in the middle comes back without raw batter on it. Do not over bake. Blondies will continue to bake as they set on the counter.

Allow blondies to cool on the counter completely before cutting into desired sized squares.

Notes

Store at room temperature in an air tight container. Blondies stay fresh for several days.
