PEEPS Graham Cracker S’mores Cookies

Graham cracker cookies with milk chocolate chunks topped with a marshmallow PEEP! Β The graham cracker cookies are a homemade cookie made using graham cracker crumbs, so you get all the flavors of a graham cracker but in soft cookie form.

These graham cracker cookies are good all on their own….PEEPS aren’t even required if ya want to keep it easy or if you don’t like PEEPS.

PEEPS Graham Cracker S'mores Cookies

Serves: 9 Cooking Time: 12-minutes

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1 egg, room temperature
  • 1-1/2 cups fine graham cracker crumbs
  • 3/4 cup all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup milk chocolate chips or chunks
  • 9-18 PEEPS

Instructions

Preheat oven to 350-degrees and line a baking sheet with parchment paper. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and brown sugar and mix until light and creamy. Add the vanilla extract and egg and mix on medium-high speed until combined.

Change the mixer to low speed and add the graham cracker crumbs, flour, cornstarch, baking soda and salt. Mix until just combined. Remove the bowl from the mixer and fold in the chocolate chips. Use a large cookie scoop (approximately 1/4 cup) to drop cookie dough balls on prepared cookie sheet.

Bake cookies in 350-degree oven for 12-minutes. Remove cookies from the oven.

Either immediately press one PEEP onto the top of each cookie or place 9 PEEPS on a microwave safe dish and microwave for 15-20 seconds or until gooey. Use a fork to place the gooey PEEP on top of the cookie and place a pretty PEEP on top of the gooey, melted PEEP. This helps to keep to pretty PEEP in place on top of the cookie. Let cookies set on the cookie sheet for 5-10 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature.

    OMG soooo cute! I love graham crackers so I think I’d eat the cookies even without the peeps but the peeps make them even more fun πŸ™‚

    Lucky me! Since I came out to see you Tuesday and you gave me a couple of these yummies to take home I actually got to eat one while I was reading this blog . . . seriously folks these are some delicious cookies . . . and Kelly since you were a kid you have always been infatuated with PEEPS so I am not the least bit surprised these bunnies found their way on top of your cookies!
