Pumpkin Pie Fudge

This Pumpkin Pie Fudge is super easy, is made in the microwave and takes just a few minutes to make!  And the best part??  Tastes EXACTLY like pumpkin pie!

This fudge would make for a great dessert to bring to a party or Friendsgiving (never too early to start planning!).  So make sure you pin this for later, because you will definitely want to have this recipe when you are in need of a quick and easy dessert dish that everyone will go ga-ga over.

Pumpkin Pie Fudge

Serves: 30 pieces Cooking Time: 1-minute

Ingredients

  • 2 cups white chocolate chips
  • 1/3 cup pure pumpkin, pressed to remove the moisture
  • 1-1/2 teaspoons pumpkin pie spice
  • 1/4 cup unsalted butter, cut into pieces
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup graham cracker pieces
  • 1/4 cup sprinkles (I used Sweets & Treats sprinkle mix)

Instructions

Line a 8-inch x 5-inch loaf pan with foil and spray with baking spray. Remove the excess moisture from the pure pumpkin by pressing it between a tea towel or in between several paper towels. The texture of the pumpkin will appear dry.

In a large microwaveable safe bowl, add the white chocolate chips, pumpkin, pumpkin pie spice, butter and salt. Microwave the mixture, stopping to stir every 15-seconds. Microwave the mixture until completely melted and ingredients are incorporated. Takes approximately 60-90 seconds to melt.

Remove the mixture from the microwave and stir in the vanilla extract and graham cracker pieces. Pour mixture into prepared pan, in an even layer and top with the sprinkles. Let fudge set at room temperature for 10-minutes, before transferring to the refrigerator to chill completely. Once the fudge has chilled and set, cut into desired sized squares.

Notes

Store fudge in an airtight container in the refrigerator. Stays fresh for 5-7 days.

The graham cracker pieces in the fudge is EVERYTHING!!!

    My favorite Pumpkin recipe is one that my family has made for years at Thanksgiving time called Choco-dot Pumpkin Cake. Besides canned pumpkin, it has many spices, nuts, chocolate chips and Raisin Bran cereal in it. It’s made in a Bundt pan and is absolutely delicious!!
